 I feel pretty lucky that I have some really great friends. The majority of us met in high school,  some of us have even been friends since elementary school, and have been through thick and thin together. I’d say it’s pretty special to have friendships that have lasted so many years! With some of us being married, having busy careers and even a few of us having kids, we don’t get to see each other as much as we used to, but when we do, crying from laughing so much is a guarantee! We’re also all foodie junkies and love to get together for potlucks and drinks. Knowing that there are some spice addicts in our crew and the boys will pretty much eat anything, I knew these Buffalo Chicken Stuffed Potato Skins would please the crowd! Continue reading →

Roasted Pine Nut, Bacon & Mushroom Stuffed Skin Chicken Breast

I have been wanting to try making stuffed skin chicken breasts for several months now, and had purchased the chicken, put it in the freezer, but never gotten around to making it until now. Since I had just gotten back from Jamaica, my fridge was a void of empty space, and so began the raid of my freezer. After pulling out the chicken, I scavenged through my fridge and pantry, and was able to pull together some pretty wonderful ingredients, coming up with this tasty recipe! Not bad if I do say so myself!

Dark Chocolate & Cranberry Stuffed French Toast

It has been quite the weekend for food blogging! In an effort to prepare for BS’ in the Kitchen’s first TV appearance (CTV Morning Live Saskatoon – we’re on air shortly after 8:30AM Friday, November 23rd so tune in if you’re local!), Carlene and I have been brainstorming a number of holiday inspired recipes, this being one of them! We picked up plenty of groceries including turkey, egg nog, and cranberry sauce, so you can except a few more recipes in the coming week! This was probably the least holiday inspired recipes (just the cranberry), but it was EXCELLENT! A great blend of tart and sour cranberry sauce, bitter dark chocolate, mild cream cheese smushed between french toast! I hope you’re drooling.

Pepperoni Stuffed Mozzarella Sticks

After making “The Canadian”, I had an abundance of pepperoni and mozzarella cheese leftover. In my efforts to use the rest of it, I had a stroke of genius, creating Pepperoni Stuffed Mozzarella Sticks! Having never made homemade mozzarella sticks, I thought stuffing pepperoni in them might not be the smartest move, but screw it! I did it anyways! While the process of making them was a little tedious, the end result was delicious! Here’s how it went down!

S’more Stuffed French Toast

As I was relaxing on my couch after a particularly long day at work, I had s’mores and sandwiches on my mind. Of course, having sandwiches on my mind pretty much goes without saying! But these thoughts of s’mores are much more rare and came about due to a workplace discussion regarding tabletop s’mores at a local gastropub. So initially I was thinking s’more sandwich…WHa??? Too strange. But then, the obvious came to mind.

S’more Stuffed French Toast.

Duh! Why was that not my first thought? I don’t know. All that matters is it was thought! So a few days later, here I am presenting the S’more Stuffed French Toast! I’ve also tried something BRAND NEW that I’ve been wanting to do for quite some time…I made a VIDEO recipe! Always interested in trying new recipes, especially those from a culinary icon like Julia Child, we opted in! Apple & Brie Stuffed French Toast

If you caught it a couple posts ago, you already know the genesis of this french toast idea, which came to be as I was fork deep in my Peanut Butter & Banana Stuffed French Toast. While many would wait and just make it the next day, there is no stifling french toast innovation in my kitchen! So with a belly full of Peanut Butter & Banana French Toast I went about (sluggishly) creating my second breakfast of the day! (Followed by a food coma and a subsequent trip to the gym!)

I don’t eat peanut butter very often, but when I do, I LOVE peanut butter and banana sandwiches as well as peanut butter and honey sandwiches. So when I saw this recipe on Foodgawker which combined all of that into a FRENCH TOAST I knew it was going down!
