For the Canada Day Weekend, my grandparents were nice enough to let me take a few friends to their cabin. So friends, if you’re reading this, be sure to comment below and say thanks – my grandma subscribes to the blog and will see your comments!! But like any Deutscher tradition, food is a must when entertaining guests! Keep their bellies happy and they will be happy!
During the weekend we ate like kings – from homemade four bean hummus with an assortment of veggies, homemade salsa with chicken to guacamole, sweet potato fries, over roasted hashbrowns, bbq’d eggs, skor bit fruit dip to coconut-panko shrimp!
Don’t judge the photos – they were taken at midnight at the lake…You can only judge if you ate the salsa, then you wouldn’t judge because it tasted amazing!
Here’s the recipe for our home-made salsa, which was tart, sweet and delicious!! We’ve already re-made it a few times:
- 1/4 cup lime juice (preferably fresh)
- 3-4 tbsp parsley
- 1/4 cup Olive Oil
- 1/2 tsp salt
- 1/2 tsp pepper
- 2-3 tomatoes (chopped)
- 1/2 red onion (finely chopped)
- 1 tbsp white wine vinegar
- 1 avocado (chopped)
- lime zest to taste
Chop all your veggies and combine everything. Serve in a deep dish or bowl. The salsa is great over chicken or whole wheat tortillas!
Now for the Coconut-Panko Shrimp, which came from High Low Food Drink‘s blog – visit HLFD for the recipe! Who said lake food had to be boring!!
All in all it was a great weekend with some amazing friends!! Thanks again Grandma & Grandpa for letting us use the cabin! 🙂
