I’ve been feeling guilty lately.
Guilty because it has been A LOOONG time since i’ve gone to the gym (which I used to do regularly), and guilty because my blogging output has been pitiful the last couple months.
With big intentions to go to the gym today, I got home from work to find this delicious looking focaccia bread on my counter. This is where my resolutions fail me.
Food blogger guilt takes over.
Gym plans scrapped, I head to the grocery store and pick up ingredients for what is sure to be a delicious, guilt-inducing creation (though I currently feel no guilt…strange? Nah!). Idea in mind, and ingredients on counter, I begin to create “The Canadian”, a delicious grilled cheese version of the Canadian Pizza (pepperoni, mushroom, bacon, mozzarella…you get the picture – awesomeness). Needless to say, this sandwich was excellent (with those ingredients, I don’t think it had a fair chance at sucking), and my food blogger guilt was relieved. Aah! Feels good! Now to deal with that other thing…. ANYWAYS here is how it went down.
“The Canadian” Pizza Grilled Cheese
- 2 Slices of Bread (I used Focaccia)
- Butter
- 1-2 Tbsp Pizza Sauce
- 2-4 Slices of Mozzarella Cheese
- 2 Slices of Bacon
- 2-3 Mushrooms (sliced)
- 1-2 Slices of Pepperoni
- Pinch of Oregano
Start off heating a pan to medium heat, and cooking your bacon until desired crispness, then saute your mushrooms in the same pan on medium heat with some butter (or bacon grease) until soft (about 10 minutes). When your mushrooms and bacon are finished, spoon about a tablespoon of pizza sauce on each slice of bread, place your mozzarella on each slice, your bacon on the bottom, then the mushrooms, a sprinkle of oregano, one or two slices of pepperoni (your preference) and top with the other slice. Butter each side and grill in the pan on medium heat until golden brown on each side! Ogle the mozzarella melting everywhere and dig in!
