With the holidays around the corner, appetizers are a much needed item at any get together, so why not spend a little extra time and make some delicious homemade ones? Better yet, get some friends together, make a large batch, have some drinks and have yourself an appie making party! As part of our holiday inspired cooking segment on CTV Morning Live – Saskatoon, tomorrow morning (December 18th – 8:30AM), I tossed around a few different ideas, but ultimately decided on creating these Roasted Garlic, Spinach & Bacon Rangoon appetizers, and boy am I glad I did! Roasted Garlic

Consider this the prelude to my next recipe (Roasted Garlic, Spinach & Bacon Rangoon). This is actually the first time roasting garlic in the oven (typically I just saute a bit in a pan!), but it will definitely not be my last! It’s super easy, and not only does it give you some great tasting garlic, but you can also make garlic infused oil in the process!

Scallops Gratinee (with Wine, Garlic, and Herbs) | JC100 – Week 14

I must admit, I was expecting this weeks recipe to be the popular boeuf bourguignon, but maybe that will be next week for the big finale! Of course, receiving a recipe with scallops was no disappointment as I LOVE seafood and scallops are no exception! As usual the recipe did not disappoint, making for a rich and delicious appetizer that left me craving more (as good appetizer’s should!).

Steak & Potato Barbecued Grilled Cheese

Let’s start off by saying WOOOOOOWWW. This latest grilled cheese creation is absolutely amazing and dare I say the best one yet?? First off, I grilled it on the barbecue, so that alone is a game changer, and second, it contains amazing ingredients from my previous grilled cheeses like potatoes, chives and caramelized onions, but adds juicy steak and provolone cheese into the mix! Seriously, this is like a steak sandwich on steroids! The idea came about while at work, as I was discussing my next grilled cheese prospect with my co-worker and friend of many years, Brett T. I had decided my next creation was going to be a barbecued grilled cheese, when Brett threw it out there…STEAK & POTATO GRILLED CHEESE.

The room was silent.

Not really…But I knew this was going down as soon as possible. The wheels started turning as I began envisioning how this behemoth of a grilled/BBQ’d cheese sandwich was going to come together, here is what I came up with.

Deconstructed Guacamole Sandwich

After picking up an avocado at the grocery store, in hopes that I would do something cool with it, I had planned on making a toasted tomato sandwich with avocado on it. While that would have been a simple and tasty dish, it wasn’t very creative. Fortunately, inspiration struck courtesy of the ingredients in my fridge (red onion mainly!) and the Deconstructed Guacamole Sandwich was created! These tasted great and were super easy to make, perfect for a quick snack or a twist on the traditional guacamole appetizer at at party!

Caramelized Onion & Mushroom Brie Grilled Cheese

Well, it’s time for another grilled cheese… Will they ever get old? I DON’T THINK SO! Since I only had one grilled cheese size portion of brie cheese left in my fridge, a vigil of sorts was necessary. To treat this last portion of cheese with the respect it deserves, a special grilled cheese was in order, one which ingredients would love to be draped in gooey brie. Shrimp Pho

While other people crave chocolate, fast food or other types of sinful dishes when they are sick or stressed out, mine is definitely Vietnamese food – specifically cold rolls and pho. I love the light and fresh flavours that leave you feeling full and happy. I usually order it from my favourite restaurant in town, the Asian Wok, but tonight I decided it was time to learn to make my own – especially with finances being strict with the new house and being sick and not wanting to be out in public…. Fried Pickles

I first saw fried pickles awhile back and thought, what a strange, but interesting combination that was. Since then and more recently my eyes have come across more fried pickles and figured what the heck, they would be easy to make and I have all the ingredients so let’s try ’em! After texting Carlene and telling her about the next blog recipe I was going to make, it became clear we share the same brainwaves. She responds “I just bought all the ingredients to make those!”, well sister, looks like I beat you to the punch! BUT maybe we will get lucky and she will do a bit of a twist and share her recipe too!

Anyways.

Let’s get to this recipe. It was strange but tasty (as evidenced by the empty bowl¬† I found myself with afterwards…).
