It seems like its been an eternity since I last posted a grilled cheese recipe, and with JC100 behind us, I’m finally getting back to regular blogging (a.k.a. MORE GRILLED CHEESE!). As mentioned in a previous post, I spent some time at my girlfriend Megan’s family cabin in BC, relaxing and eating lots during the September long weekend. Naturally, conversation drifted towards grilled cheese at some point during our stay, and Megan’s younger cousin Kasane mentioned she always puts pickles in her grilled cheese sandwiches!
PICKLES!?!
Why had I not done this before?? I’ve enjoyed pickles and cheese on several occasions, but never thought to put them in a grilled cheese! This all changed very quickly, as I later made one for Megan, and we both agreed it was a wonderful combination! So here it is folks:
Dill Pickle Grilled Cheese
- 2 Slices French Bread
- 2 Slices Cheddar Cheese
- Dill Pickles
- Fresh Dill
- Butter
This recipe is really simple! Butter every side of your bread, place cheese on the bottom slice, slice up enough pickles to cover the bottom slice, sprinkle fresh dill on it, top with another slice of cheese, your bread and you’re ready for grilling! On Medium heat, grill each side until golden brown and the cheese has melted. If your bread is browning too fast, and the cheese isn’t melting quickly enough, just turn the heat down!
Once it’s all grilled up, slice it in half and admire the glorious cheesy meltiness, top it with a sprig of dill for presentation and dig in!
I actually found myself sprinkling more dill on the sandwich as I was eating it, so don’t be scared when putting it in the sandwich! The savory cheese, melted into tangy pickles was wonderful, and adding the fresh dill was a great call, as it gave the sandwich a boost of dill flavor and a really refreshing zing! Feel free to experiment with other flavours too! Maybe throw some dill pickle chips into the mix, or use a different kind of cheese? (I think a stronger cheese would go great in this sandwich, as it would balance well with the dill and pickled tang).

Growing up, we’d always make grilled cheese sandwiches and right when it came out of the pan … we’d open it up, put dill pickles & mustard inside and chow down. SO good!
