Loaded Portobello Mushroom

March 24, 2012 by bsinthekitchen

It’s time for another portobello recipe! This one is real easy and a great healthy platform for all those wonderful things you put on a loaded baked potato (which may not be so healthy!). I’m pretty sure you could put sour cream, bacon, chives and cheese on anything and it would taste awesome, so this was a no-brainer!

Loaded Portobello Mushroom

  • Portobello Mushroom
  • Sour Cream
  • Cheddar Cheese
  • Bacon
  • Green Onion/chives
  • Salt & Pepper
  • Garlic Powder
  • Olive Oil or Butter

Preheat your oven to 425°F. While you’re waiting, scrape out the gills of the mushroom with a spoon and brush with olive oil or butter and sprinkle some salt, pepper, garlic powder and shredded cheddar cheese on it. Once your oven has heated cook your portobello for 15-20 minutes.

Cook a couple slices of bacon in a pan on medium-low heat while you’re waiting for the mushroom to cook if you aren’t using bacon bits or frozen bacon.

Once everything has finished cooking, top your mushroom with sour cream, bacon bits, green onions and a little more cheese and VOILA you’re done!

Enjoy!

Bob

These look fantastic – such a good idea to get the same flavors without the heavy potato!

Finally found a Saskatoon food blog – awesome. Will be back many times. I’m also obsessed with food and foodgawker, but not talented enough for a blog. 🙂

Glad you enjoy the blog Charlotte! Anyone can start a blog though (even if you don’t think you’re talented enough). We have no cooking experience beyond our home kitchen and have only started learning about photography since we started the blog, so if you want to start something like a blog, go for it! The talent starts to come along the way 🙂
