I go through these phases in life where I can’t stop thinking about grilled sandwiches. My last serious episode was right around the same time BS’ In The Kitchen was born. There is just something extremely satisfying about a sandwich when you grill it. Take your bread and your ingredients and stack’em into a sandwich and you might have a tasty sandwich. But when you take all those things and fry it in a pan, or grill it in a panini press something magical happens! All those delicious ingredients just meld into this glorious irresistible super sandwich! Crispy bread, gooey cheese, all the toasty goodness that is inside…droool.
Anyways.
So THIS SANDWICH IS AMAZING! I have been plotting this grilled cheese for about the last week after browsing all the grilled cheeses on Foodgawker and conjuring up new forms of never before blogged grilled cheese! Once the idea was born, I couldn’t stop thinking about it.
Broccoli and Cheddar Soup deconstructed and rebirthed into sandwich form. Sounds amazing right?
Well it is!
Well that’s enough of glorifying grilled sandwiches, let’s get to the main attractions
Broccoli & Cheddar Soup Grilled Cheese
Ingredients
- 2 Slices French Bread
- 1 Slice of Yellow Onion
- 4-5 small pieces of Broccoli, chopped
- 2 Slices Chicken Breast Deli Meat
- 1/2 Clove Garlic, chopped
- 1/2 cup Cheddar Cheese
- 3 tbsp Butter
- Salt
- Pepper
Instructions
- In a pan on medium heat, add 1 tablespoon butter
- Once heated, add broccoli and onion, cooked until broccoli is tender and onion is translucent, then add garlic, cooking for 30-60 seconds.
- Butter the outside of each slice of bread
- Top bottom slice with 1/4 cup shredded cheddar cheese, broccoli & onion mixture, chicken meat, another 1/4 cup of shredded cheddar cheese, and your remaining slice of bread.
- Fry in a non-stick pan on medium-low heat until bread is golden brown and cheese is melted.
One of the great things about this sandwich is the fact that it’s very easy to make and all the ingredients are usually in your home!
Start by chopping up the broccoli into small(ish) pieces, they can be as big or small as you want. While you are chopping the broccoli, get a frying pan on medium heat and add the broccoli pieces with a knob of butter. Mix it all around to get the broccoli coated in butter and start chopping your garlic and slicing your onion. Once that is done, put everything in the pan (feel free to add more butter if you like) and cook until the broccoli gets to a nice dark green and the onions start to get translucent. Just before you take off the broccoli mixture, take two slices of chicken breast deli meat, shred it up and cook it in the pan for 30 seconds or so. The chicken is there to emphasize the flavour of chicken broth which would go into a broccoli and cheddar soup.
Once the broccoli is cooked, take your bread and generously butter the outside of each slice. On the bottom slice, place a slice of cheddar cheese , then the broccoli mixture on top. Top that off with another slice of cheddar cheese and your other slice of bread. In the same pan on medium heat, fry your sandwich until golden brown on each side (give it a good squish with the spatula as it is cooking).
You have now created your masterpiece! Congratulations.
I was really hoping this sandwich would turn out to be good, as I was unsure how broccoli in a sandwich might taste, but it was heavenly!
