Lettuce Wraps

Before trying to make these at home, I was always a bit confused why people would want to eat lettuce wraps – with no carbs, sauces or spices how could these things be tasty? Well, was I proved wrong. Lettuce wraps are not only uber healthy, but surprisingly packed with flavour and very easy to make. So let’s get to the recipe so we can all enjoy this healthy meal.

The ingredients can very and can very to suite your personal veggie likes and dislikes, but this is how I made my lettuce wraps:

  • Romain & iceberg lettuce for the wraps

Inside the wraps I scattered the following ingredients:

  • Shrimp & Grilled Chicken
  • Crumbled goat cheese
  • Carrots
  • Cilantro
  • Diced peppers
  • Chickpeas
  • Corn
  • Diced tomatoes
  • Purple Onions
You can basically put any flavours in the lettuce wraps that you like, but I liked the creaminess of the goat cheese, the fresh taste of the cilantro, the sweet of the corn and the kick of the purple onion. 
To assemble, just fill in the ingredients onto the lettuce, roll and enjoy! I also served these up with my quick and easy sweet potato fries, which you simply cut up, toss in olive oil and sprinkle with sea salt, paprika (and lots), brown sugar, chilli powder and a bit of pepper. Place them on a cookie sheet that’s been lined with parchment paper and bake at 400ºF for 10-15 minutes or until your desired crispness. These fries are also great when served up with mayo dip (mayo, mustard, salt, paprika & chilli powder).
