Pot of Gold Cupcakes

I made these cupcakes for St.Patrick’s Day – which also happens to be Bob’s birthday – so Happy Birthday Little Bro. These cupcakes were a bit time consuming but the attention they got was definitely worth it! 🙂

I used Saucy Sprinkle’s Cheater Cupcake Recipe because I was a bit rushed for time:

  • 1 French Vanilla Box Cake
  • 3 Eggs
  • 1/2 cup Melted Butter
  • 1 cup water
  • Wilton gel green food colouring

Place batter into lightly oiled cupcake liners and place into a 350°F oven for 18 minutes. Take out and let the cupcakes completely cool before icing.

For the icing, I used a my delicious Cream Cheese Buttercream Icing. Combine the following ingredients below and blend until smooth:

  • 3-4 cups of icing sugar
  • 1 block of cream cheese
  • 1/2 cup butter
  • 2-3 tbsp cream
  • 1 tsp Wilton butter flavouring
  • 1 tsp vanilla extract

Pipe onto the cupcakes with a small round tip to shape the icing into the form of clouds. To make the little pots of gold, I ended up using foil covered peanut butter cups, topped with a dollop of the icing then rolled into yellow sprinkles. To create the rainbows used sour candy rainbow belts and anchor onto the cupcake using icing sugar. I also added a bit of icing to the base of the pots of gold to give them extra hold to the cupcake.
