Parmesan… roasted garlic… fried potatoes… you are pretty much guaranteed your food is going to taste good with those ingredients! This recipe is super easy and very tasty!
Rosemary Parmesan Garlic Potatoes
(Makes 1-2 Servings)
- 2 Potatoes
- Parmesan
- Rosemary
- 2 Cloves of Garlic
- Butter
- 2-3 Tbsp Canola Oil
- Salt & Pepper
Skin and cut two potatoes into chunks; while cutting the potatoes put a frying pan on medium-high heat with about 2-3 tablespoons of canola oil (could also use olive oil if you prefer). Once all the potatoes are cut your pan will be thoroughly heated, place your potatoes in the pan, salt and pepper them to taste, mix them to evenly coat each potato in oil and cover with a lid. After about five minutes, add the needles from one stalk of rosemary.
Once the potatoes are almost all nicely browned add a tablespoon of butter to the edge of your pan, once it melts, add your two cloves of chopped garlic, coating them in butter and then mixing them into the potatoes. After adding the garlic, shred some parmesan cheese onto the potatoes (as much as you want!) and mix it into all the potatoes. Once your potatoes are golden brown, give them a taste to make sure they are done and enjoy!

When I made these potatoes, I felt like it could have used more garlic and the flavors weren’t really popping for me until I added lemon juice. After the lemon juice, I thought it was delicious. 🙂
