When I first saw this recipe in Bon Appetit, it was so strange, I couldn’t not try it. I showed it to my room-mates, Celeste and Ross, and we were all intrigued enough to test it out.
Of course, we couldn’t just leave the recipe alone, so we added a fried egg, and the results were quite amazing! After eating it, we realized this toast actually made perfect sense! It had a lot of flavours typically used in Asian cuisine, with its use of peanut, sriracha, green onion, cilantro, and lime.
Fried Egg, Sriracha, & Peanut Butter Toasts
Ingredients
- Bread
- Peanut butter crunchy
- Green Onion
- Cilantro
- Lime
- Sriracha
- Course salt
- Egg
- Butter
Instructions
- Get a pan to medium-high heat, add butter and fry egg once pan is heated.
- Toast bread.
- Spread peanut butter, sprinkle with chopped green onion, cilantro, and some peanuts if you don't have chunky peanut butter. Drizzle with sriracha, and squeeze the juice from a quarter of a lime wedge on to it.
- Place a fried egg on top, sprinkle with coarse salt and enjoy!
I would suggest making this recipe late one night after work, when weird food cravings strikes. At least, that seems to be when I crave this strange recipe the most!
