One evening I was looking for a quick (yet tasty) recipe for cookies. I didn’t want to go to the grocery store so I had to look what I had on stock and find a recipe to fit those ingredients. I decided that these Chocolate Peanut Butter cookies from Amanda’s Cookin’ and they looked delicious and boy was I right! So let’s stop the BS’ing and get to the recipe….
1/2 cup vegetable shortening
3/4 cup smooth peanut butter
1 1/4 cups brown sugar
3 tbsp milk
1 tbsp vanilla
1 egg
1 1/4 cups flour
1/2 cup cocoa (I’ve recently fallen in love with Bulk Barn’s cocoa powder)
3/4 tsp salt
3/4 tsp baking soda
Preheat oven to 375ºF. In a large bowl, combine the shortening, peanut butter, brown sugar, milk and vanilla and cream until smooth. Add your egg and mix until combined with the rest of the wet ingredients. Add in you dry ingredients and mix until all the ingredients are mixed amongst each other.
Lay parchment paper on a cookie sheet and scoop large balls of dough onto the cookie sheet. They don’t spread out too much so you should be able to put 12 cookies per cookie sheet. Before placing the cookies into the oven, press a fork onto the cookies, lightly flattening to create a crisscross pattern.
Bake for 7 to 8 minutes. Be very sure not to over bake. You might think that the cookies don’t look too done but trust me – they are! DO NOT OVERBAKE. Let stand for two minutes then take off the cookie sheet and place onto a cooling rack to completely cool. Once cool, place in mouth, savour, drool & enjoy!

I used butter and crunchy peanut butter and they were delicious…almost like brownies!

I’ve only ever seen peanutbutter cookies, or peanutbutter with chocolate kiss in them. This is a nice way to blend the two 🙂
