Focaccia Bread Pizza

Two friends from the University of Alberta recently moved to Saskatoon to take their Masters of Professional Accounting program. As a welcoming gift, I decided to make them their first meal in Saskatoon. I wanted something that was easy to make (so they could remake it), but will also satisfy their manly hunger – well for one at least, the other one I was warned just likes rice & chicken ;). On the hunt for a recipe that would meet those needs, I thought how great would mini focaccia bread pizzas be?! I ended up using thisĀ great recipe from the Bare Foot Kitchen Witch for her Summer Focaccia. Just make sure to take some time to make the focaccia, as it takes a while.

For the sauces, I used two different kinds…one was extremely challenging to make: Kraft Three Cheese Ranch Dressing. I should appear on Iron Chef, I know…. The other was a bit more complex, but equally as easy:

Homemade Pizza Sauce (add, taste and add more if you need & go)
  • Ketchup
  • Oregano
  • Pepper
  • Chili Powder
  • Victorian Epicure Pasta Seasoning

Topping included tomatoes (place on paper towel before putting on pizza, just so the crust doesn’t get soggy), onions, yellow peppers, chicken, spinach, mozzarella/cheddar cheese and goat cheese. Feel free to put anything on for toppings!

I’d also recommend putting parchment paper down as it makes cleaning the cookie sheets easier.

Ora, andate a mangiare pizza! (Italian for “Now, Go Eat Pizza!”)
