I don’t eat peanut butter very often, but when I do, I LOVE peanut butter and banana sandwiches as well as peanut butter and honey sandwiches. So when I saw this recipe on Foodgawker which combined all of that into a FRENCH TOAST I knew it was going down!
The recipe I followed is Bobby Flay’s version of the Cafe 222 french toast which I believe appeared on The Best Thing I Ever Ate?
Peanut Butter & Banana Stuffed French Toast
Makes 1 Serving (though you can squeeze two sandwiches out of the egg mix if you want another!)
- 1 Banana
- 2 Slices of Bread (I used French Bread)
- 1-2 Tbsp Smooth Peanut Butter
- Honey
- 2 Eggs
- 1/8 Cup of Heavy Cream
- 1/2 Tbsp Vanilla
- 1/2 Tbsp Cinnamon
- 1/4 Tsp Nutmeg
- Dash of Salt
- Butter
Let’s start with the french toast mix. In a bowl (one that will be easy to fit the sandwich), combine your eggs, heavy cream, vanilla, cinnamon, nutmeg and a dash of salt. Gently whip until the eggs have been scrambled and everything is combined.
Now for the sandwich! Spread a thin layer of peanut butter on each slice of bread, place your sliced banana on one slice, drizzle some honey on the other slice and put the sandwich together! Get a pan on medium heat with about a tablespoon of butter. Once it has heated and the butter is beginning to bubble, dip your sandwich in the egg mixture, coating each side and then fry in the pan about 3-4 minutes per side (or until brown).
If you’re a fiend for whipped cream like I am, pour some whipping cream/heavy cream into a bowl, add a couple drops of vanilla extract, a few pinches of cinnamon and sugar to taste and whip it while you are waiting for your french toast to cook!
Once browned one each side, plate it, drizzle with honey or maple syrup and top with whipped cream if that’s what your heart (and stomach!) desire!
I had absolutely NO concern as to how much I would enjoy this feast of a breakfast, it’s pretty much all my favourite things in one. Breakfast, peanut butter combined with bananas or honey, all fried into a sandwich in the form of french toast! I’ll take two!!
…Matter of fact, I have a guilty confession. As I was making this glorious breakfast, the wheels in my head started turning as I thought of a sandwich I was considering making with the current items in my fridge (Apple & Brie Grilled Cheese). Well before I knew it, I had consumed my first stuffed french toast and begun what would become the Caramelized Apple & Brie Stuffed French Toast!! A sweet and savoury grilled cheese/french toast metamorphosis which I consumed right after the previous one…OOOPS! So if I’m ever able to get up again, be on the lookout for that one!

What a coincidence that you pingback me. I was thinking of you today. I followed your instructions on the Lowel Ego DIY you posted and I can’t find a dual light fixture. Home Depot and Lowes didn’t have it. I settled for a shop light, 8 1/2 inch aluminum dish, a 100 (27wt) trucolor bulb and with the shop light comes two wires for a cage, so I put a diffuser over that. I’m working with it to see how well I like it. It isn’t the most convenient. Would prefer to have tabletop lighting but I’ll keep looking for the dual light fixture. Maybe an actual hardware store has one. You should sell a kit. 🙂

What a wonderful coincidence, the french toast was AWESOME! Selling a kit is not a bad idea, might have to consider that! I’m surprised you were unable to find the dual light fixture at Home Depot (that’s where i picked up mine), if you can’t find it elsewhere I would see if they could order one in for you (http://www.homedepot.com/buy/lighting-fans/fluorescent-lighting/leviton/660-watt-white-keyless-twin-socket-adapter-lampholder-38414.html – You can find the SKU# there), i’m sure they would do it free of charge.

This sounds amazingly delicious! Thanks for sharing! I have been making some french toast lately for my daughter and have used hydrated chia seeds as an egg substitute (just to try something a little different)….she loved it! Have you ever tried chia seed as an egg substitute before?
