Here is a spur of the moment recipe I decided to throw together and it was mighty tasty!
Since I have never cooked stuffed chicken breast or quinoa for that matter, I was very pleased with what came of it. I started with the quinoa, putting in a cup of water with a cup of quinoa, adding a tablespoon of butter and some garlic plus to the water and let it cook til it was tender enough. As I was cooking the quinoa, I roasted some red peppers and tomatoes on the barbecue and added them, along with some crumbled feta to the quinoa.
To stuff the chicken I just sliced the middle open, put the quinoa mix in and used some toothpicks to hold it together. I kept the chicken seasoning simple, with some parmesan and Italian dressing on the top and a little bit of greek spice. I cooked it on the barbecue on medium-high heat for around ten minutes (until the chicken was done) and it came out excellent!
For my first foray into stuffed chicken breast and quinoa, the meal turned out very well and I will definitely be doing more of this!
