Simple Greek Salad

August 23, 2011 by bsinthekitchen

A good friend at work always makes Greek Salad and I go all kindergarten on her and usually end up trading some of my lunch or flat out stealing some of her delicious greek salads she always makes. So I finally got the ingredients to make them myself. If you’re trying to up your veggie intake this is a great way to do so! So let’s get to the recipe (which yields about 2-3 servings of entree sized salads)

  • 3 peppers – yellow, orange and red (thinly sliced)
  • 2 tomatoes (cut in half then quartered)
  • Handful of olives
  • 1/4 of a red onion
  • Sliced radishes to taste
  • Half of an english cucumber sliced and quartered
  • Feta (who should have Frank’s hot sauce’s slogan: I put that shit on everything)
  • Pure Kraft Greek Feta Salad Dressing
  • Two chicken breasts seasoned with Johnny’s Garlic Seasoning, sliced before topping the salad
Take all of the ingredients, combine, stir and enjoy this veggie packed delight!
