Tomorrow (or I guess today once this post is published), I will be making my way to New York for the first time, where I will most certainly be enjoying a slice of pizza or two! In the spirit of New York and pizza, I felt this recipe that has been hanging out in my blog archives for quite some time needed to be shared!
This awesome pizza uses Jim Lahey’s amazing “no-knead” pizza dough, making it ridiculously easy to make! You basically just put everything in a bowl the night before, and voila, the next day it has become an amazing pizza dough! Now that’s my kind of recipe! Of course, I had to add a little bit extra to it, because following a recipe to the tee is never as much fun!
Spinach, Mushroom & Goat Cheese No-Knead Pizza
Ingredients

- No-Knead Dough
- ----------------------
- *makes 3 10-12 inch pizzas
- 500 grams 3 3/4 cups all purpose flour
- 2 tsp salt
- 1/4 tsp active dry yeast
- 1 1/2 cups water
- garlic powder to taste
- oregano to taste

- handfuls spinach
- tomato sauce
- red onion
- mushrooms
- goat cheese
Instructions

- Combine dry ingredients in a mixing bowl, slowly add the water, whisking until ingredients are well combined. Be generous with the garlic powder and oregano!
- Gently mix the dough with your hands until a ball is formed.
- Cover bowl with plastic wrap, allowing the dough to rest at room temperature for around 18 hours, or until roughly double in size.
- Once dough has rested, cut into three portions. On a floured worked surface, gather four corners to the center of the dough, creating four folds.
- Place seam side down, gently form dough into a ball, dust with flour, wrap in plastic, or cover with damp towel and let rest for 1 hour.
- Before cooking the pizza, turn oven to its hottest setting (~500F), allowing to preheat for one hour. If using a pizza stone, place it in the oven before preheating.
- To form the discs, flour a work surface, and using the back of your hands, gently stretch the dough into 10-12 inch discs.
- If using pizza stone, place pizza on the stone, turning the oven to broil, and cook for 5-7 minutes until pizza is cooked to your liking.
- If you don't have a pizza stone, place pizza on a floured baking sheet, cooking for about 10 minutes on the ovens hottest setting.

- Spread a couple spoonfuls of tomato sauce on dough.
- Top with a couple handfuls of spinach, sliced red onion, mushrooms and goat cheese.
- Cook & enjoy!
There isn’t much of a recipe when it comes to the actual pizza toppings, because well, who measures their pizza toppings, and who wants to be restrained by a strict recipe right? Make this awesome dough, and top it with whatever amazing ingredients you would like!

This is perfect, goat cheese is the better choice for staying fit and thin because is lower in fat and calories, spinach which is so healthy and mushrooms which are my favorites definitely I have to try this soon, thanks for sharing this delicious and healthy pizza recipe
