Everyone loves summer and what goes better with summer than s’mores. Now add cupcakes to that combo. Instant success! While these cupcakes might look tricky and complicated to make, fear not, they are actually quite simple just like their grandparents – “The Original S’More’.
Now when I don’t have time (or quite frankly, when I’m not feeling too ambitious in the kitchen), I use my holy grail (HG) cupcake base recipe from fellow local blogger, Saucy. LOVE IT – super simple & you’re guaranteed to get compliments on how moist and tasty they are.
Now it’s time to get into the kitchen:
Cupcake base: 1 box Devil’s Food Cake (re-mixed Saucy style)
Marshmallow Fluff Icing:
- One jar of marshmallow “Fluff“
- Mix in approx. 1/2 buteer
- Enough icing sugar to get your desired consistency (should be able to form soft peaks)
Other Ingredients:
- Dulce de leche (you can buy this at Superstore, but you can use any caramel sauce or even nutella)
- Animal Crackers or Graham Crackers
- Milk Chocolate Chunks (I used Bernard Callebaut)
Now comes the fun part… the decor of the cupcakes! Now, here’s a Deutscher Secret, grab a plastic bag and place some Dulce de leche (a sweet caramel sauce ) in the corner, seal the bag and twist it until all the Leche is in the corner. Grab some scissors, snip the edge and in a zig zag pattern, swirl over the cupcake. Reach over to your “Marshmallow Fluff Icing”, put it in an icing bag with a tip (I prefer the Wilton 1M tip) and generously top onto the cupcake. Use another ziploc bag to put some animal crackers in, grab your rolling pin and smash those little critters. After your zoo has been destroyed, take the crumbs and sprinkle over the cupcakes and top with the milk chocolate.
Simple. S’more Cupcakes!
