“The Margherita” Pizza Grilled Cheese

Now I know some of you guys(/girls) will disagree with me here, but often times I feel the need to expand my cooking/blogging repertoire by focusing on more non-sandwich dishes. Of course the pull of the almighty sandwich is a strong one, and soon enough, I find myself relapsing with yet another grilled cheese recipe on my hands. Fortunately, my Grilled Cheese support group (a.k.a our faithful readers!), make me realize there is no shame in creating one more grilled cheese!


So with comments like “he’s back”, “genius” or unintelligible “AEDEAJGKEDROOOLS”, I feel like it’s my duty to open the floodgates of my mind and unleash more sandwiches onto the world! (Who wants to buy me a food truck?!?) As a result of positive responses to my last grilled cheese “The Canadian”, and the ball of mozzarella in my fridge, I set about creating another “Pizza” grilled cheese! This time I bring you my take on the classic Margherita Pizza!

Margherita Pizza Grilled Cheese Sandwich

Ingredients
  

  • 2 Slices French Bread
  • 2 Tbsp Pizza/Tomato Sauce
  • 2-4 Slices Mozzarella Cheese
  • 3-4 Fresh Basil Leaves, chopped
  • 1-2 Pinches Garlic Powder
  • Olive Oil

Instructions
 

  • In a pan on medium-low heat, add a light coating of olive oil.
  • While pan is heating, brush the outside of both slices of bread with olive oil (a flavoured olive oil like basil, or garlic goes great on this sandwich!),
  • Spread 1 tablespoon of pizza sauce on the inside of each slice of bread, top the bottom slice with 2-4 pieces of fresh mozzarella, fresh basil, a sprinkle of garlic power, and the top slice of bread.
  • Place in pan, cooking until bread is golden brown and cheese is melted. Add more olive oil if needed.

Let’s start things off by getting a pan on medium heat, with a light coating of olive oil. While the pan is heating up, build your sandwich. Spread pizza/tomato sauce on each slice of bread, chop up your basil leaves and sprinkle them on the sandwich along with a sprinkle of garlic powder. Place you mozzarella on top and combine the slices of bread. Lightly brush olive oil on each side of the sandwich. I used basil olive oil which worked wonderfully, but regular olive oil is just fine!

Once the pan is heated, grill your sandwich until golden brown on each side, serve with a basil leaf on top for decoration (if you’re into that!) and dig in!

I have done next to no cooking with basil, but I must say I love it’s flavour, especially combined with the tomato, so I will definitely be doing more basil related recipes in the future! As for the grilled cheese, it was wonderful! The gooey mozzarella, tomato sauce, with the fresh bite of basil went great together, I can see why it’s a timeless flavour combo! I can only imagine how good this would be with a homemade tomato sauce using fresh garden tomatoes!
