To continue on our holiday donut theme for CTV Morning Live Saskatoon, here is the Mistletoe donut to go along side The Relative and Santa’s Milk & Cookies. Now you are probably wondering… ‘what the heck… why is it a mistletoe donut?’….well with this little donut packing some Kahlua and Skor Toffee bits, it’s rather easy to read between the lines and maybe if you have a little bit of Kahlua and you’re under the mistletoe, you’ll “skor” (…a kiss…). Now let’s get to this feisty little donut.
Watch us prepare this holiday treat on CTV Morning Live – Saskatoon here:
The Mistletoe | Kahlua & Skor Baked Donut
- 2 1/2 cups flour
- 2 tsp baking powder
- 1/4 tsp baking soda
- 4 tbsp butter, room temperature
- 4 tbsp canola oil
- 1/2 cup sugar
- 4 tbsp espresso or strong dark roast coffee
- 1 tsp vanilla
- 1/2 a vanilla bean (seeds scrapped out)
- 1 cup milk, room temperature
- 2 eggs, room temperature
Preheat your oven to 400°F. Start by creaming together your butter, oil and sugar until light and fluffy. Add in the remaining wet ingredients and combine until well mixed. Now add in your dry ingredients and mix until a thick, sticky dough forms.
Pour your donut dough into a large ziploc bag, cut off a corner and pipe the dough into your greased donut pan. Bake for 10 minutes until a tooth pick comes out clean. Let cool for two minutes and then transfer to a cooling rack.
The Mistletoe Frosting
- 2 tbsp Kahlua
- 2 tsp vanilla
- 2 cups icing sugar
- 4 tbsp heavy cream
- 1 tbsp white corn syrup
Beat all ingredients together until they are well mixed. Frost your donuts with the Kahlua frosting then dip them into a plate full of skor toffee bits.
Now, go find your special someone, cozy up with a cup of hot coffee and enjoy a little mistletoe treat!
