At work we had a Valentine’s Day baking potluck, so I’ve decided to make one of my favourite cupcakes – Magnolia Bakery’s Red Velvet with a Cream Cheese icing. These little babies are to die for!
Let’s get to the recipe:
- 3 1/2 cups cake flour
- 3/4 cup unsalted butter
- 2 1/4 cup sugar
- 3 eggs
- Red food colouring
- 3 tbsp unsweetened cocoa
- 1 1/2 tsp vanilla extract
- 1 1/2 tsp salt
- 1 1/2 cups buttermilk
- 1 1/2 tsp cider vinegar
- 1 1/2 tsp baking soda
Preheat oven to 350ºF oven. In a large bowl, cream the sugar and butter together until light and fluffy (about 5 minutes). Add the eggs, one at a time, beating well after each egg. In a small bowl, beat together the red food colouring, cocoa and vanilla. Add to the batter and beat well.
In a measuring cup, add the salt to the buttermilk. Start adding to the batter, alternating between the buttermilk and flour, beating in between each addition. Using a small bowl, combine the cider vinegar and baking soda and add to the batter, mixing well.
Pour the batter into cupcake liners and tins, place in the oven for approx. 15-20 minutes. Watch and test with a toothpick to see when the cake has fully baked.
Pipe with a Cream Cheese icing (icing sugar, cream cheese, butter, cream and vanilla) and top with cute little heart sprinkles!

Those look absolutely delicious!! How much food colouring did you use to get that deep red colour?

Not that much! I use Wilton food dye gel’s – this time I used a combination of Noel Red and burgundy (about 1-2 tsp). Just remember, red is typically a color that deepens once baked. I also buy all my Wilton food dye gel’s from Michael’s. Thanks for the comment 🙂 Carlene
