I have been wanting to try making stuffed skin chicken breasts for several months now, and had purchased the chicken, put it in the freezer, but never gotten around to making it until now. Since I had just gotten back from Jamaica, my fridge was a void of empty space, and so began the raid of my freezer. After pulling out the chicken, I scavenged through my fridge and pantry, and was able to pull together some pretty wonderful ingredients, coming up with this tasty recipe! Vichyssoise (Cold Leek & Potato Soup) | JC100 – Week 5

We are now on week five of trying various recipes of Julia Child’s – hard to believe time is zipping by this quickly. Salad Nicoise | JC 100 – Week 4

Time is flying by with the Julia Child 100 year celebration and it’s already onto week 4! This time with the fancy and filling Salad Nicoise [nee-SWAHZ]. With each assignment Carlene and I receive, we try to stay true to the recipe, but add a little extra flare if possible! This week is no exception. Instead of piling a bunch of ingredients into a bowl, we wanted to use some great fresh tuna and a different plating style to class things up a bit!

Coq au Vin | JC 100 – Week 3

It is now week 3 of the 100 year celebration of Julia Child and they’ve hit us with a doozy! Well not really, but this one did certainly take more time than the Omelette Roulee of week 1 which was in and out of my HOT pan in a minute and a half! (That’s my kind of recipe). This week I was faced with Coq au Vin, which is essentially “Chicken in Wine”. I knew this would be more challenging for me, not because it was difficult to prepare, but because I don’t like following recipes, but I stuck it through and it was a success!

Steak & Potato Barbecued Grilled Cheese

Let’s start off by saying WOOOOOOWWW. This latest grilled cheese creation is absolutely amazing and dare I say the best one yet?? First off, I grilled it on the barbecue, so that alone is a game changer, and second, it contains amazing ingredients from my previous grilled cheeses like potatoes, chives and caramelized onions, but adds juicy steak and provolone cheese into the mix! Seriously, this is like a steak sandwich on steroids! The idea came about while at work, as I was discussing my next grilled cheese prospect with my co-worker and friend of many years, Brett T. I had decided my next creation was going to be a barbecued grilled cheese, when Brett threw it out there…STEAK & POTATO GRILLED CHEESE.

The room was silent.

Not really…But I knew this was going down as soon as possible. The wheels started turning as I began envisioning how this behemoth of a grilled/BBQ’d cheese sandwich was going to come together, here is what I came up with.

Date Night Dinner Menu | Salmon with a Mustard Dill Sauce and Scalloped Potatoes

It’s hard to believe that another Valentine’s Day (or as I like to call it: Singles Awareness Day) has come and gone. This year, a good friend of mine, Chantal, has her fiance away at Police School so I invited her over so she wouldn’t have to be alone on the day of love and let’s face the facts – I love cooking for people! Even more when they do the dishes after! I wanted to make a meal that was healthy, yet filling, delicious and relatively quick to make. I settled on a Mustard Dill Salmon, Scalloped Potatoes, a Fresh Greens Salad and Pavlova for dessert. Baked Potato Grilled Cheese

Behold my latest creation…THE BAKED POTATO GRILLED CHEESE! After the glory that was the Brocolli & Cheddar Soup Grilled Cheese, I began racking my brain for what other wonderful things I could deconstruct into grilled cheese format. Soon enough I had envisioned this piece of grilled cheese heaven! I mean how can you go wrong with fried potatoes, bacon, cheese, sour cream and chives all made into a melty grilled cheese?
