Potato Encrusted Salmon

After watching an episode of the Food Network’s Diner’s Drive-ins & Dives where they made a potato crusted salmon, I was inspired to try making my own variation, so here’s what I came up with.

Potato Crusted Salmon

  • 1 Potato
  • 1 Salmon Filet
  • Garlic Plus (or garlic salt)
  • Salt & Pepper
  • 2-3 Tbsp Flour
  • 1 Egg
  • 2 Tbsp Cream Cheese
  • Lemon
  • Vegetable Oil

So this is a fairly simple recipe to prepare, first start with the potatoes. Shred the potato into a bowl, rinse with cold water until the water becomes clear. Place the shredded potato between paper towel drying it off as much as possible (doesn’t have to be completely dry!). Once this is done, put the shredded potato back in a dry bowl, add the salt, pepper, garlic plus and flour, mix it all in and stir in one egg.

In another bowl, mix two tablespoons of cream cheese along with some lemon flavouring (you can use lemon spice, juice or zest), stirring until spreadable. Finally take your salmon fillet, spread the cream cheese on each side and cover the entire salmon with the shredded potato.

Cook in a pan on medium-high heat, with a enough vegetable oil to cover the bottom of the pan for about 5 minutes on each side, until the potato is golden brown. After you’ve cooked everything, feel free to garnish it as you like (I chopped up some tomato and cucumber), I imagine a hollandaise sauce would be very tasty with this!

    Wow this looks really delicious! I don’t know if I would have ever thought to do something like this- potato encrusted salmon. I don’t cook fish too often, but I do like my seafood every now and then. I’ll keep this recipe on hand for next time!

    Do you think this would work if baked?

      Yes, I’m sure you could bake it, not sure how long it would take though. Probably 15-20 minutes at 350-400 degrees. If you try baking, let us know how it goes!
