Shrimp Fresh Rolls with a Homemade Peanut-Ginger Dipping Sauce

So if anyone knows me really well, they will know that fresh rolls are my weakness and probably one of my top ten favourite foods. The bonus? These little guys are fairly healthy too – especially if you pack them full of veggies. So let’s get to this asian delight of a recipe!

Ingredients you will need:

  • Rice paper
  • Rice noodles
  • Lettuce (cut into small stripes)
  • Carrots (julienned or shredded)
  • Veggies of your choice (peppers, sprouts, cucumbers, etc.)
  • Cilantro or Thai Basil if you’d like something different
  • Shrimp, thin slices of pork or chicken
Now… this is where the recipe gets a bit hard to explain via text. The easiest way to explain how to make and ‘roll the rolls’ is to probably watch a video… Here’s a short great video: Fresh Rolls How To
I also served these cold rolls with a homemade ginger sauce which was a combo of the following (this is another BS’ style recipe – meaning just taste, add, taste, add, taste…add….):
  • 2 tbsp natural peanut butter
  • 3 tbsp soy sauce
  • 2-3 tsp fresh grated ginger
  • 2 tbsp granulated sugar
  • 1 tsp chilli paste
  • 2-3 tsp lime juice
Mix the above ingredients, taste and add until you get a taste that you enjoy. Serve in individual dipping bowls. Fresh rolls are also great with any kind of Thai sweet chili sauce.

    These rolls had me drooling! They look delicious and I can’t wait to run to the store now and get the ingredients to try them out.

    The rolls are appealing, got me craving. The sauce is what really impressed me, i’ve never used a spicy peanut sauce before, sounds very good. This really is an inspiring post, love the photos 🙂
