Asparagus Soup

Here is a wonderfully green and very simple soup to make, which can be served hot or cold!

Asparagus Soup

Serves 1-2 people

  • 30 Asparagus Spears
  • 1 Cup of Chicken Stock
  • ½ White Onion
  • 2-3 Cloves of Garlic
  • 1 Tbsp Olive Oil
  • Zest & Juice of Half a Lime or Lemon
  • Salt & Pepper to taste

Combine asparagus, onion, and garlic in a pot, add salt and pepper to taste and steam until the asparagus reaches its desired tenderness. Next, add one tablespoon of olive oil and the lime/lemon zest and juice to the asparagus, onion and garlic and puree everything in a blender or food processor. As you are doing this, start heating a cup of chicken stock, adding the pureed asparagus mix, stirring and bring to a simmer. That’s it! This is a very quick, healthy soup, and very tasty if you are an asparagus lover like myself!

    The soup looks wonderful, and I love the way it’s served. Where did you get those great looking spoons?

      Thanks! The spoons are actually from Dollarama, only $1 each! If you have a Dollarama where you live, they have lots of neat little dishes that are all a dollar. Great places for some props.
