Bob & I were recently selected as Western Canada’s Top 20 food bloggers (as selected by Maple Leaf Foods) – SUPER exciting right?! Anyways, Bob and I nearly jumped out of our pants when we found out we had been selected. Now, you may be asking: Okay, cool that you guys got picked, but why/now what?
Well we were sent a lovely little package via courier and inside was an awesome meat thermometer, a Maple Leaf Red Apron (I strong armed Bob to keep it) and some coupons for Maple Leaf Prime Pork. The Challenge: Create a Dynamic Pork Recipe & Win (via votes – this is where you come in BS’ers) the Maple Leaf Prime Pork Recipe Challenge.
So let’s get right into this and start off with our recipe. Okay, I lied, I’m first going to give you background to why we selected this recipe. Bob and I know the typical person who reads our blog is looking for a delicious meal that is reasonable in price to make and is quick. Well here’s the bonus with this recipe: we’ve taken this flavor packed pork rub and used the left over meat for left-over recipes/meals. That’s right, one recipe that is quickly converted into more! Talk about the perfect recipe for those busy families, the hungry university student and most importantly….you!
Okay, the teasing is done, here’s the recipe:
- Preheat over to 375°F
- One Maple Leaf Prime Pork Boneless Roast (Centre Cut)
- 2-4 tbsp Olive Oil
- Generously coast the pork in olive oil
- Carribean BBQ Rub (Coriander, Salt, Onion Flakes & Sugar) by Coastal Cocktails
- Rub the Carribean BBQ Rub into the pork until well coated to make a nice crust one cooked
- One Large Ripe Mango (skin removed and sliced thinly)
- 1/2 cup unsweetned Peach Medley Apple Sauce (Apple, Mango & Peach Blend)
- Half white onion (cut into rings)
- One large apple (also cut into rings)
- Rosemary Sprigs
In a glass baking pan, spread out the apple sauce, then top it with the onion, apple rings and the mango slices (save a few of these for the pork). Now, place the pork on top of apple sauce, onions, apples & mangoes. Take a small hand full of rosemary leaves and the left over mango slices and place on top of pork. Place the remaining springs of rosemary around the pork.
Place in oven & cook for approx. 45mins to 1 hr (We followed the super handy instructions on the Maple Leaf Prime Pork packaged – we’d recommend doing this!). After the roast is cooked, slice in fine medallions and top with a Mango & Apple Puree (equal parts ran through a food processor until smooth with a bit of brown sugar) & serve!!
I also have to mention something quickly before ending this post. I have to comment on the quality of this pork: Holy Moly was it delicious!! Limited in fat & incredibly moist. To be honest, I’m not the largest pork fan (largely because I think before this challenge we bought not the greatest pork & also because of health reasons), but I can easily say the tastiness of this pork may just have me converted!!
