After a recent challenge from the honorary eater of the Boy Bait Cookies to re-create Culina’s famous blueberry butter, I ventured into the kitchen to see if I could even come close to matching it. Well, I think I may have done it!! *Secretly gave myself a quick fist pound in the kitchen for accomplishing this – shhh don’t tell anyone…* And to my surprise, making homemade butter was even easier than I thought, so now I challenge you to make some of your own homemade butter:
- 1 cup of whipping cream or heavy cream
- Using a food processor, whip the cream for approx. 5-7 minutes. You’ll notice that it goes through different stages from being liquid, to a light whipped cream, to an almost hard whipped cream, then around the 5 minute mark it will start to separate forming buttermilk. Once it appears like the majority of the butter has been separated from the milk, completely drain all liquid from the butter. You may need to press the butter against the sides in order to completely drain the milk away.
- 1 tsp salt
- 3 tsp blueberries, saskatoon or rasperberries
- Sprinkle in salt and fruit and blend until completely mix. You may need to re-drain some of the fruit juices out, similarly to what you did to the milk.
Simple! Taste great on any morning toast or scone!!
