Anyone out there hate eating vegetables or just find them a bit boring to eat? If so, I challenge you to run to your local grocery store and pick up a spaghetti squash. This little veggie bomb is surprisingly packed with taste, has a nice crunch to it and best of all, is very easy to make! Oh I guess I should mention it’s healthy too!
Here’s my recipe for Parmesan Tomato Spaghetti Squash:
- One spaghetti squash
- Cut in half, shell out seeds and place in a dish that allows the squash to sit in some water (about 1/2 an inch). Feel free to sprinkle the squash with Olive Oil, Salt & Pepper
- Place in 375ºF oven for approx. 45 mins
- Canned, diced tomatoes
- 1/2 cup parmesan cheese
- Salt and pepper to taste (you may also add dill if you’d like)
- Take squash out of the oven and scrape out with a fork until all you have left is the shell. Place the squash “guts” in a dish and mix in tomatoes, cheese and spices. Serve & Say “Yum”.
