Here is a recipe I created the same day I made the delicious Smoked Salmon Bagel Grilled Cheese. Given that I wanted to keep things grilled cheese focused during April, I have kept from posting it until now! Although for anybody following me on Instagram, you might remember seeing it!

Let this mark the beginning of our month long ode to the almighty Grilled Cheese! As part of National Grilled Cheese Month (possibly the best month ever), we are going to be posting a new grilled cheese EVERY DAY, yes you read that right! Every day tune-in to BS’ in the Kitchen and treat your visual tastebuds to some amazing new grilled cheeses (and THEY WILL be amazing!).
To start things off I present the Smoked Salmon Bagel Grilled Cheese, all the classic flavours of a smoked salmon bagel, with some Gruyere cheese, grilled to perfection! And when I say perfection, I mean it! This sandwich/bagel was amazing! I don’t even like smoked salmon that much, but it paired really well with the Gruyere cheese, I couldn’t get enough! You get the crisp exterior of the bagel, a smooth, creamy layer of cream cheese, a subtle bite from the red onion mixed in with the smokey, nutty flavour from the salmon and Gruyere. Then every couple of bites, there is a burst of pickled-vinegary flavour from the capers and a fresh bite of dill. The ingredients balanced each other so well and made for one unreal grilled cheese!

Every time I cook a recipe from Bon Appetit, I am consistently impressed with how good it is, and this one is no exception! What a great trio of flavours this dish had. At it’s base there was rich, flaky salmon with a beautiful pan-seared crust, on a bed of hearty collard greens, finished off with a side of cool, refreshing Radish Raita. Having never actually eaten collard greens, and having seen them recently at the local Sobey’s, my interest was peaked when I came across this recipe in Bon Appetit’s March issue.

It’s hard to believe that another Valentine’s Day (or as I like to call it: Singles Awareness Day) has come and gone. This year, a good friend of mine, Chantal, has her fiance away at Police School so I invited her over so she wouldn’t have to be alone on the day of love and let’s face the facts – I love cooking for people! Even more when they do the dishes after! I wanted to make a meal that was healthy, yet filling, delicious and relatively quick to make. I settled on a Mustard Dill Salmon, Scalloped Potatoes, a Fresh Greens Salad and Pavlova for dessert. I have to send out an apology to all our faithful viewers out there for the lack of posting lately, Carlene and I have both been quite busy in the other aspects of our lives and unfortunately BS’ In The Kitchen has taken a hit! On a positive note, we are still cooking up tasty meals and taking pictures, we just haven’t gotten around to posting. So you can expect a surge of new posts once we finally find the time to do them all!

Well whataya guys know, Carlene finally started posting again! Nice change up from my manly posts hey? Well what’s manlier than cooking on cedar planks? NOTHING. That’s what…well not really, but cedar planks certainly add a nice flavour. Once again, we have another first. My first time using cedar planks, mind you, these were also a bit of a test purchase, seeing as I bought them from Dollarama…No offense to Dollarama, but I think I got what I paid for. They certainly did smell amazing and added some great flavour to the salmon, but they started on fire really easy…OOPS! Well enough with the chit chat and onto the cooking! Cold Rolls are one of my favorite foods. Not only are they reasonably healthy because they are usually made out of rice, an assortment of veggies and a small amount of protein. Because of these simple, but tasty ingredients, cold rolls make for a great choice for those with a sensitive tummies or gluten allergies! Another bonus is that rice noodles and rice paper is ridiculously cheap – I think I spent tops $3 for the noodles and paper at Superstore.

Sorry for the slacking on the blogging, I’ve been busy working looong days, but here I am with a continuation of the last post. This was my first experience grilling salmon on the barbecue so I was a little concerned about it turning out properly, but I let my instincts guide me and it was delish!
One of my favorite foods has to be fish – whether that’s because of my father’s fishing accomplishments or just because it tastes awesome – I just love it! Salmon and walleye are my two favorite fish to eat. On a recent trip to Costco, I convinced my mom to buy a fresh salmon steak so Bob & I could have a cook off. Both were delicious, mine was on the light, fresh tasting side with Bob’s tasting sweet and rich with hidden flavors of candied salmon. To those inexperienced chefs out there in the blog world, don’t fear salmon, it’s relatively hard to screw up and most people love it!
