I recently moved to Vancouver and am finally getting settled in and had some time to make something I felt was blog-worthy. It’s not the fanciest but it helped me get back into cooking/blogging mode so I am satisfied with it! My roommate Jordan brought home some leftover pig from a pork roast at the school he teaches, so I knew I could definitely make something out of the leftovers (which were delicious). Since I didn’t really have much for groceries, I mixed together what ingredients I could find and made a simple quesadilla.
Sweet & Smokey Pulled Pork Quesadilla
- Pulled Pork
- 2 Tbsp Bulls-Eye barbecue sauce
- 1 Tbsp Agave Nectar
- ¼ of an Apple
- Cheddar cheese (Brie would taste excellent with this though!)
I just shredded the leftover pork, put it all in a pan on medium heat for about five minutes while mixing in all of the ingredients (minus the cheese). Once your filling is ready, put a tortilla in a buttered pan, add some cheese and the ingredients, cooking until the tortilla is crisp and brown on each side.
I wasn’t sure how this was going to turn out, but I was pretty happy with the result, I really enjoy the hint of sweetness from the agave nectar and apples coming through the smokey barbecue sauce. I definitely would like to try this again but replace the cheddar cheese with some brie. I know that would be amazing!
