What can you do with leftover risotto other than eat it? Make Risotto Balls and THEN eat it! As I began to get hungry again after making my breakfast risotto, I began wondering what I could make for lunch. Feeling a little lazy I was struck by inspiration and decided to make risotto balls out of my leftover Breakfast Risotto.
Breakfast Risotto Balls
- Leftover Breakfast Risotto
- Egg
- Flour
- Cereal (I used Special K Vanilla Almond)
- Canola Oil
Making risotto balls is very simple, just put some cereal in a Ziploc bag, crush into tiny pieces and put it in a bowl. Take two other bowls with whipped egg, and another with flour and roll a heaping tablespoon of risotto into a ball, roll it in the flour, then the egg, and finally cover it with the cereal crumbs. Once you have finished covering your risotto balls, pour some canola oil into a pan on medium-high heat, and fry your risotto balls until they are nice and brown. You can also do them properly and use a deep fryer, which will do a much better job of frying them while maintaining their shape, so if you have a deep fryer, go for it!
If you are unsatisfied with your less than perfect shaped risotto balls, just smoosh them and make risotto cakes!
