Mr.Chutney & Mrs.Mango Go On an Adventure

As mentioned, I attended a stagette this past weekend. Along with the Bride-to-Be Cupcakes, I also brought along this delicious delight: Brie Cheese Baked in Homemade Mango Chutney. This is a great, easy-to-make recipe that impresses the crowd!

The recipe came from a simple Google search and can be found here for the mango chutney. I also added more brown sugar, substituted craisins for raisins, opted out of the mint and added about 1 tsp of corn starch (make sure to pre mix in HOT water before adding) to thicken it up a bit.

After making the chutney, be sure to let it cool down completely. Set the brie in a small ceramic or glass baking dish. After the chutney has cooled, spoon it over top of the brie (about 1/2 thick) and bake at 400ºF for about 15 mins (watch carefully… the brie should start to bubble up). Let cool for about 3-5 minutes before serving with a freshly cut baguette.

I suppose I’m coming to that age where people start settling down and getting married. Last night I attended the stagette of a fellow team member on my basketball team, for the sake of the internet & internet creepers, we’ll call her Lady Roch (we’ll just avoid that high school nickname…if you really want to know it, trace back a few years in the paper haha). As stagettes are commonly filled with male anatomy, food and booze, I thought what better to bring that booze flavored cupcakes and a delicious appetizer of brie cheese and mango chutney (watch for another post in the near future). Summer is Coming – Time to Break out the S’Mores

Everyone loves summer and what goes better with summer than s’mores. Now add cupcakes to that combo. Instant success! While these cupcakes might look tricky and complicated to make, fear not, they are actually quite simple just like their grandparents – “The Original S’More’.

Now when I don’t have time (or quite frankly, when I’m not feeling too ambitious in the kitchen), I use my holy grail (HG) cupcake base recipe from fellow local blogger, Saucy. LOVE IT – super simple & you’re guaranteed to get compliments on how moist and tasty they are.

So i came across this recipe for the Perfect Fried Egg
and aside from lots of butter, the key was to slow fry the egg. Now as a guy, I want my food and I want it fast, so the idea of “slow” frying something never occurred to me. Turn the heat on high and let it sizzle! Well that’s my usual approach, but after seeing this I had to give it a go. So after getting home in the morning from a few too many drinks the night prior, I thought to myself, what better than fried eggs!

Everyone Needs a Little BS in Their Lives

So here we are, starting a blog. As I’m sure those of you visiting have seen numerous mentions of this potential blog on Carlene’s facebook and may have been awaiting the birth of the blog. Well wait no more!

We are not cooking extraordinaires by any means, but apparently there are lots of people out there who don’t know how to cook, who knew? We will be posting up some simple everyday recipes, hopefully some more daring ones, and of course Carlene’s Cupcakes!
