Whenever “ooey gooey, runny egg yolk” is involved in a recipe, say no more! I WANT IT! Not to mention, bacon AND cheese! Like seriously, what am I doing to myself?! Now I was having a bit of an internal struggle with this grilled cheese, deciding, hmmm should I put a hashbrown in it, or would that be too much? After all these epic grilled cheeses, I was leaning towards excluding it, I mean how much can my body take!?! Of course I consulted with Carlene, and she insisted I put a hashbrown in it…well I guess that’s part of a complete breakfast right!? Clearly she doesn’t care about my health…
I think this one is pretty self explanatory, cheese, bacon, hashbrown, runny yolk fried egg, topped with MORE cheese, sandwiched between toasty grilled bread… It was delicious, not to mention FILLING! The good thing about this grilled cheese, is you won’t have to eat for the rest of the day…
The Breakfast Grilled Cheese
Ingredients
- 2 slices of bacon
- 1/2 small russet potato
- 1/2 tbsp flour
- Onion powder
- Garlic powder
- 1 egg
- 1/2 heaping cup of shredded cheddar cheese
- 1 tbsp chives/green onion optional
- 2 slices french bread
- Butter
- Salt & pepper
Instructions
- Place bacon in a pan, turn on heat to medium.
- While bacon is frying, shred your potato, place between paper towel, pressing out moisture, placing between another fresh sheet of paper towel, until most moisture is removed.
- Add about 1/2 a tablespoon flour, salt, pepper, a sprinkle of onion power, and a pinch of garlic powder. Mix into potato, form into patty.
- Flip your bacon, move to the side of the pan, add hashbrown patty to the center of the pan.
- While the bacon and hashbrown cook, slice your bread, buttering each outer side.
- Shred a heaping 1/2 cup of cheddar cheese.
- Once bacon is fried to your desired crispness, remove from pan, place on paper towel. Continue cooking hashbrown until browned on both sides.
- Begin building your sandwich, placing some cheese on the bottom slice, chopped green onion, bacon, then your hashbrown.
- Add some butter to your pan, add egg, salt & pepper to taste, and cover with lid, cooking until white film forms over your egg yolk.
- Add bottom half of your grilled cheese to pan, add egg on top of hashbrown, topping with the rest of your cheese.
- Once bottom slice has browned, gently place top slice on your sandwich, carefully flipping sandwich (trying not to break egg yolk).
- Cook until bread is browned, remove from pan, slice in half, and serve!
This grilled cheese will get your day started off on the right foot, or back on track if you are feeling a little ill… (*cough*hungover*cough*)
