After making the amazing Bacon & Blue Cheese Steak the other day, rather then just heat up the leftovers, I wanted to make something delicious and blog-worthy! Continuing on with the blue cheese and bacon theme, I settled on making a delicious steak salad with bacon blue cheese dressing for lunch!
It was great! Fresh romaine lettuce, topped with tender steak and a tangy homemade blue cheese dressing made a refreshing, yet hearty lunch!
Steak Salad with Bacon Blue Cheese Dressing
This hearty, yet refreshing salad is the perfect way to use up leftover steak!
Ingredients

- Bacon Blue Cheese Dressing
- -------------------------------------
- 1 tbsp sour cream
- 1/2 tbsp mayonnaise
- 1/2 tsp lemon juice
- 1/4 tsp white wine vinegar
- 1 tbsp 2% milk
- 1/4 tsp Worcestershire sauce
- 1 tbsp blue cheese
- 1/2 tbsp real bacon bits
- salt & pepper to taste

- Salad
- -------
- 6-8 thin slices of steak
- 4-6 leaves of romaine lettuce
- 1 tbsp real bacon bits
- 1/4 to mato chopped
- 5-7 slices of cucumber
- thinly sliced red onion to taste
- 1 tbsp crumbled blue cheese
Instructions
- Add dressing ingredients to a small bowl, mix until combined.
- Tear your romaine lettuce into pieces, adding the rest of vegetables, sprinkle with crumbled blue cheese, bacon bits, and the desired amount of dressing.
- If you prefer a lighter dressed salad, the dressing recipe may be enough for two salads.
I still have half a leftover steak, so perhaps tomorrow I will make something else blogworthy for lunch! Maybe a steak sandwich? Maybe I’ll just eat it! Who knows? You will just have to wait and find out!
