They say necessity is the mother of invention. How did necessity invent this sandwich you ask? Well one day after work, with bacon in my fridge and sandwiches on my mind, I was finding a BLT VERY necessary. Now here comes the gut wrenching twist…
I had no lettuce.
Of course, the idea of a bacon, something green, and tomato sandwich still remained very necessary. So I poked my head back into the fridge. Something green….
Asparagus.
BAT.
And so it was born: The Bacon, Asparagus and Tomato Sandwich.
The B.A.T. Sandwich
- 2 Slices of bread
- 4-5 Asparagus spears
- 1 Tomato
- 3-4 Slices of bacon
- Mayonnaise
- Salt & Pepper
Just like the BLT, there is not much work to putting this sandwich together, but the simple flavours are what makes it so tasty!
You can make this in whatever order you like, but I started with the asparagus, putting them in a large pan on medium-high heat with enough water to cover the bottom. Lightly salt the asparagus and cover with a lid and cook until desired tenderness. Alternatively, you could cook your bacon first and cook your asparagus in the bacon grease (!!!).
In another pan (or the same one you did the asparagus in), fry your bacon on medium heat until desired crispness.
Toast your bread, put a generous amount of mayonnaise on each slice, place the asparagus and tomatoes, add some salt & pepper to taste, then top with bacon, your top slice, and feast!
This sandwich was definitely a winner for me. I’m a huge asparagus fan, and bacon pairs quite nicely with it, so it made a great combo! After eating this, I started thinking of other things that pair well with asparagus, and of course hollandaise sauce came to mind. Although I felt hollandaise wouldn’t fit in this sandwich, it would fit in PERFECTLY if I added a nice runny yolk, fried/poached egg…DROOL. You guys know I’ll document my adventures of BAT 2.0 when that time comes!
