Well folks, I auditioned for Masterchef Canada! It came as a bit of a surprise when I woke up to a call from a casting agency, telling me they were impressed with my audition video, and wanted me to come to Calgary to audition for the show! I had actually applied last year, and didn’t hear anything back at that point, so it was quite unexpected when I received a call from the show. I recently went from having never made fried chicken, to making it four times in about a week and a half, thanks to one of my recent adventures – auditioning for Masterchef Canada! Yup, I’m gonna try and get on a TV show! I will go over more details in my next post, when I post the actual recipe I made for the audition, which you may have guessed, includes all of the recent recipes I have posted – biscuits, mayo, coleslaw, and now fried chicken!

This fried chicken is amazing! The recipe is adapted from the fried chicken dish at Ayden Kitchen & Bar, so you know it’s gotta be good! It has tons of flavour, and makes a super tender chicken, with delicious crispy skin.

This stuff is like spreading crack on your biscuits. It may become very difficult to stop eating whatever is lucky enough to be lathered in this delicious “butter”! You could just spread butter on your bread, then honey, and sprinkle cinnamon after, but why not just take a second, whip all this together into one delicious spread?

I highly recommend it.

My favourite kind of recipes are those that are easy, yet impressive, and buttermilk biscuits definitely meet that criteria! They take about 30 minutes start to finish, they use common household baking ingredients, and the smell/taste of freshly baked biscuits is amazing! What better way than a video, to show you how easy they are!

I actually shot and edited the majority of this video over a year ago, but for whatever reason I never completely finished it. Fortunately I was making biscuits last night, so I decided it was time to wipe off the cyber-dust it was collecting, finish the video, and finally post the damn thing!

Barbecue season is here! To celebrate, Carlene and I were asked to talk about barbecuing on CBC Radio’s Saskatoon morning show, and to share some barbecue recipes that differed from the usual steak and burgers. Although we already have a fair bit of unique BBQ recipes on the blog, it got me thinking about the other things I have barbecued but never blogged.

When I first saw this recipe in Bon Appetit, it was so strange, I couldn’t not try it. I showed it to my room-mates, Celeste and Ross, and we were all intrigued enough to test it out.

Of course, we couldn’t just leave the recipe alone, so we added a fried egg, and the results were quite amazing! After eating it, we realized this toast actually made perfect sense! It had a lot of flavours typically used in Asian cuisine, with its use of peanut, sriracha, green onion, cilantro, and lime.

I’m gonna go right ahead and say that I have the best room-mates ever! Nathan is an executive chef, Ross is a cook, and Celeste is a pastry Chef. Needless to say, some pretty awesome culinary happenings have a tendency of going down here!

Thanks to Celeste’s sourdough starter she calls “Fester”, we have a steady supply of fresh sourdough bread being baked up every few days. Last night as Celeste made a couple loaves, she did some experimentation with one of them, and added sesame seeds. Not only did it turn out delicious, but it inspired me to create an “Asian Steak Sandwich”, which was not only beautiful, but delicious!
