I was little frightened when my room-mate Nathan told me I was going to be in charge of cooking something for “Ethnic Potluck 2014”, a potluck with all the kitchen staff from Ayden Kitchen & Bar. Naturally it’s a little intimidating cooking with chefs of that level, and knowing I had to make a dish from another country didn’t help! Fortunately I got Vietnam, which I felt was one of the less intimidating submissions amongst places such as Peru, Croatia, Morocco, & more. After doing some research, given my love of sandwiches, I knew the Banh Mi was the way to go!

With my research and a little consultation from Nathan, I was ready to prepare my feast of Banh Mi! The end result was delicious! Although I have never actually had a Banh Mi, I think I did pretty darn good, and everyone else seemed quite satisfied with my contribution.

This months issue of Bon Appetit is really appealing to my taste-buds! I’ve done the Chicken & Dumplings, the Peanut Butter-Sriracha Toast (which I tried out of pure curiosity and it was actually delicious), and now this pork chop. Not to mention a number of other recipes that have piqued my interest. In my efforts to reduce the amount of meat I keep in my freezer, I will be on a steady diet of pork chops and chicken until it’s all gone! 

Last night after thawing out a pork chop, I realized I had some fennel in the fridge, along with a butternut squash puree that I thought would all go perfectly together. Recalling the Fennel Crusted Pork Chop recipe from Bon Appetit, I gave it a go with a few alterations!

Avocado Chocolate Pudding I feel really accomplished putting this post up – the blog’s been a bit neglected, but I’m down for the count with pneumonia, so curling up on the couch has allowed me a bit more computer time than normal. So with that, I present to you: Avocado pudding. Yup… Avocado pudding. Now, you’re likely thinking “What? Ew, that’s gross”, but trust me it’s great and you’d never guess that avocados are the main ingredients. This recipe even got the full Dad seal of approval (and from the guy who normally hates ‘hippy’ food). While I like that this recipe is healthy for you, I really enjoy that it’s super fast and easy to make! So let’s get to this dessert recipe.

It’s that time of year again. Christmas! It’s also time for another BS’ in the Kitchen cooking segment on CTV Morning Live Saskatoon. Given that it is Christmas time, it was only appropriate to do something fitting of the season.

I was first introduced to strata by my girlfriend, whose Mom makes a large one for breakfast every Christmas morning. Being that I’m swamped with work, I really didn’t have time to think up some elaborate Christmas themed recipe, instead opting for a delicious dish that could be easily and quickly made for either a group breakfast, or even as an appetizer! I’ve been having the oatmeal cravings like mad lately. Perhaps it has something to do with the winter and feeling the need for a hearty/healthy breakfast, or maybe it’s because I keep seeing little mason jars filled with oatmeal and other wonderful things online? Today I realized I hadn’t posted anything on this blog for the last month and a half…since starting this blog over three years ago, it’s been updated fairly regularly, and while there have been slow months, there has always been a few new recipes each month…until now…almost. Coming to that realization, I knew I needed to take some time today and at least post one thing, because I feel really bad about how neglected this blog has become.

For those who have been sticking around, I thank you! I definitely don’t want to neglect the blog, and have no plans to stop blogging, it’s just been a very busy several months. All though things are quite busy, it’s awesome and a blessing when starting your own business! Although I have been away from the blog, I’ve been doing plenty of food related work. I’ve continued shooting recipe videos  and blogging for tablespoon.com, creating and managing a visual marketing campaign for Ayden Kitchen & Bar (Top Chef Canada winner Dale MacKay’s new  restaurant), and more recently becoming the video editor for a hunting TV show! It’s been a busy few months, and I don’t see it slowing down, but i’m learning a ton, and getting better at managing several projects at once!

Here is a recipe that just makes sense! Taking traditional spaghetti and meat sauce, but swapping the pasta for squash. I apologize in advance to those who like very specific recipes. I made meat sauce the previous night and used the leftover sauce when making this, so i’m estimating the measurements, but hey! It’s a meat sauce. If you are measuring everything you’re doing it wrong! It’s all about adding in the main component, adding a dash of this, a dash of that, tasting, adjusting, and enjoying!
