In a never ending quest to expand my culinary horizons and due to a large amount of fresh basil in my fridge, I decided it was time to try making pesto for the first time!

It certainly won’t be my last!

This stuff was delicious! I ate a significant amount just “taste-testing” the pesto and I had to stop myself before it got out of hand and I ate it all! Along with trying my hand at pesto, I figured why not shoot a video for it too right!? I wanted to try a different editing style on this video, and decided to channel my inner James Brown and make a funky piece of music to go along with my vision. I gotta say I’m pretty happy with the results!

For whatever reason, this week just felt like a pizza week, but truth-be-told, every week could be pizza week because that stuff is freakin’ amazing! Especially with this ridiculously easy pizza dough recipe. It literally takes about 5 minutes to make (maybe less).

For this pizza I decided to keep it simple and go with a classic margherita style pizza with tomato sauce, fresh tomatoes, basil and mozzarella, topped off with a sprinkle of salt! So simple, so good!

Browsing through my favourite magazine (Bon Appetit of course!) I came across this simple and delicious looking recipe for Citrus Marinated Chicken. Taking some chicken out of the fridge, I went about assembling the marinade when it took a bit of a left turn! Cutting into what I thought was an orange, but was actually a small, very orange-esque grapefruit, I had to make a little change of plans! Undeterred, I went with it, using grapefruit as my main citrus and making a few changes here and there to the recipe.

In the end, it all worked out and  I had myself some tasty chicken. It had some great teriyaki flavour with hints of citrus and a really nice caramelization from the sugars in the marinade. Served with some rice and fresh veggies, it made an easy and delicious meal!

I have had visions of creating a salad in this style for quite some time and finally got around to actually doing it the other day! Along with fancying up the presentation of a watermelon salad, I wanted to try marinating watermelon and this was the perfect opportunity!

Initially I had plans to add some baby arugula into the dish, unfortunately when I went to the grocery store they were all out, so I just had to make do without it!

This salad really transforms the watermelon into a savoury dish that felt surprisingly hearty! Marinating the watermelon adds subtle hints of lemon, honey and balsamic to the freshness of the watermelon, and pairing it with the feta, mint, bacon and red onion makes it much more savoury. Topping it all of with a drizzle of balsamic vinegar gives it a bit of needed acidity and a nice tang!

Does the thought of corn terrify you?

If so, I apologize in advance, this post is not for you, but for the sake of others I must go on! In the latest installment of Tablespoon.com videos, I present to you “How to Grill Corn”, a quick recipe video detailing the process of grilling corn in their husks to some bumpin’ tunes (made by yours truly)!

I was blessed with straight teeth, and fortunately didn’t have to exile my pearly whites to years behind bars. As a result, my love for corn has remained strong and every summer when corn is in season, I fully embrace it!

During a recent trip to Toronto, I had delicious cereal crusted french toast for breakfast that left me inspired to create something similar! The french toast had a corn flake crust, giving it a crunchy, slightly sweet exterior, but rather than copying the recipe exactly, I went ahead and used Cinnamon Toast Crunch for my version!

This french toast was rich, crunchy, and sweet, perfect for those times you really want to spoil yourself for breakfast!
