It’s that time of the year… Squash season!

Thanks to my mother planting copious amount of spaghetti squash this year, I have been racking my brain, trying to think of different ways to use that delicious vegetable! In the past, I have always kept it quite simple, roasting the spaghetti squash, then mixing in some diced tomato and onion, which makes a perfectly delicious meal. But this time I wanted to really take advantage of the squash and the fact that it makes a perfect little boat for other ingredients when cut in half.

I must say September was a pretty pitiful month for blogging and I apologize for that! It’s not that I haven’t been cooking anything, I just haven’t been taking the time to edit the images, and write up a blog post. I’ve got a few recipes that are quite timely for this fall season, so you can expect a little more blogging this month!

Let’s start with this delicious meal featuring some wonderful ingredients from my mothers garden! The stars of the dish are delicious onions that have been drizzled with balsamic vinegar and roasted, as well as a hearty pork chop finished with chive butter. My house smelled so good after making this, it was a low level of torture, having to wait to eat this while smelling it and taking pictures.

Apple Ginger Chutney (Canned)It’s hard to believe fall is already here with the trees transforming into hues of golden yellow, burnt red and rusted orange. While fall leaves some feeling a bit blue, knowing that summer is ending and winter is only around the corner, but for me – I LOVE it! Cool but still warm temperatures, the ability to relish in the last moments of the summer sun, the fashion (boots, boots, boots! Can’t forget the cozy scarves and sweaters) and not to mention great fishing, and something new for me this year – hunting! Another fall bonus is the harvest season – veggies and fruits galore!!! This year a friend shared some beautiful Saskatchewan grown apples with me, along with an apple pie and crisp that she and her mom made (This crisp was probably the best crisp I’ve ever had. The caramel like coated apples had me at first bite). You seriously can’t get a person that’s more kind and generous as she is! These apples deserved to be transformed into something delicious and this is where this recipe comes in, so let’s get to it…..

Unfortunately most of them aren’t ripe…

Having been picked a couple weeks too early, they are quite sour. In my efforts to use them up, I have been cooking the apples to sweeten them and using them as an oatmeal topping. As I was cooking the apples, it dawned on me “why am I not posting this on the blog?”. I can’t believe it’s September already. Where did this summer go? I’m not sure if it was having the snow stay into early May or just being so busy, but this summer seemed to wiz right by. With September here in full force, so is school. Yup that’s right – back to the books, the late night studies, copious amounts of coffee and the ever growing wealth of knowledge. When CTV Morning Live contacted us about doing another segment, this time anchored around budget and student friendly meals, Bob and I agreed to the challenge (the video of the segment is posted below – tune in to see who received the “dunce” cap). Bob made some flavour packed chicken cacciatore and my rival dish was one of my favourite foods: Vietnamese cold rolls. Let’s get to my recipe (which by the way costs an average of $2.49 CAD for a serving of four cold rolls).

Now don’t get too shocked when you read this next sentence: hello, it’s Carlene here. I know….. I’m slightly ashamed to say I haven’t blogged in the past four months… yes FOUR months. Luckily Bob has been able to keep everyone up to date with some delicious recipes while I took on the challenge of a new job and a completely new schedule, said “see you when I see you” to a dear friend who lost his courageous battle with cancer, took a new focus on myself and those who matter most to me and continued to tackle my photography business. While food was still a centerpiece in my life over the past four months, unfortunately the blog got the shortest stick while I took some quality “me” time to figure what life really is about and what truly matters. I’ve come to the conclusion that it’s not money, a job, things or status. It comes down to time and who you choose to share it with and who chooses to value yours and share theirs back in exchange.  Within that shared time is where memories are made and friendships take life. Perhaps it’s time that is the most valued commodity, not gold, gas or oil, and the one true gift you can share with those who matter most to you.

After taking some of time to “spend” on me, I’m back in action with a fresh cherry scone recipe using Saskatchewan cherries picked from our parent’s orchard. Let’s get to this recipe……

The Breakfast Pizza – the end of a trilogy! This also marks the 4th day in a row that I have eaten pizza. I can’t complain though, pizza is a wonderfully balanced meal in my eyes (and stomach)!

I figured it was time to try making a breakfast pizza, and let me tell you, it did not disappoint! Not only did it gift my nostrils with the pleasant aroma of my breakfast favourites, the flavour was wonderful! Combining breakfast classics onto thin, airy pizza crust, how could you go wrong?
