Sorry for the slacking on the blogging, I’ve been busy working looong days, but here I am with a continuation of the last post. This was my first experience grilling salmon on the barbecue so I was a little concerned about it turning out properly, but I let my instincts guide me and it was delish!

One of my favorite foods has to be fish – whether that’s because of my father’s fishing accomplishments or just because it tastes awesome – I just love it! Salmon and walleye are my two favorite fish to eat. On a recent trip to Costco, I convinced my mom to buy a fresh salmon steak so Bob & I could have a cook off. Both were delicious, mine was on the light, fresh tasting side with Bob’s tasting sweet and rich with hidden flavors of candied salmon. To those inexperienced chefs out there in the blog world, don’t fear salmon, it’s relatively hard to screw up and most people love it!

As usual, what I cook is determined by what is in my fridge (which my beloved parents faithfully restock on a regular basis!). So when I saw six pork chops I knew what my supper was going to be, so off I went to the interwebs in search of a recipe which I could pull off with what ingredients were on hand. These two cookie recipes are two out of my top three favorite cookies to make. They are chewy, great tasting and guaranteed to put a smile on someone’s face. So, sit back, relax and soak in the goodness of the Homemade Oreo Cookies & Monster Cookies.
These cookies have ranked themselves as favorites for many of my friends and are frequently requested as treats for meetings. Luckily, these cookies are reasonably quick (as long as you have all the ingredients on hand and don’t have to run to a grocery store) and are a blast to make! Just think of it as a little sandwich assembly line!

Bacon wrapped mmmmmm. Now this was my first venture into the world of bacon wrapping, so I was quite excited and slightly nervous as to how things would turn out. Well fortunately things were a success! (minus a few mishaps with some potatoes). These were made for a potluck since I had waaaay too much bacon in the freezer, some steaks, lots of potatoes, and I knew they would make great appetizers. I’m not going to have exact quantities for the recipe, as I pretty much just free-styled all the ingredients (I do this lots), so there is lots of room for improvisation.

Recently our mother ran her first half marathon (woot! way to go mom!) and had some of her running friends for a carb & protein loading party the night before. A part of their dinner was Beer Butt Chicken, so we took the carcasses (shouldn’t there be a better word than that for a cooking blog? That word sounds so morbid) and made some soup. So just remember friends, when the world gives you chicken, make some chicken soup or should we settle for the quote by Lady Gaga “Once you kill a chicken, you gotta make some chicken soup.”

As I make the morning trek from my lair up the stairs and into the kitchen, I wonder, what awaits me in the fridge today? Well I already knew half the answer; Four chicken breasts.
So immediately I fire up the barbecue (now you may think barbecuing chicken breasts for breakfast is strange, but I assure you it is completely normal!), I pull out the chicken and start with the sauces and the spices. Chipotle Mango on two breasts, Caribbean Chicken Rub on another and smothered the last in Chicken & Rib Renegade (yeah it’s badass). So as my morning progresses I need to start figuring out what’s going to be making its way into my belly. Well upon further inspection of the fridge, I find remnants of Carlene’s lovely dish in the blog below, and I can imagine you already know what’s going to happen next…
