Vanilla Bean Salted Caramels
If anyone is looking for a fairly quick and impressive recipe, salted caramels may just be up your alley! I’ve made my original salted caramel recipe a few times now and just about have it down to a science, but this time I wanted to do something a bit different,so I decided to add some vanilla beans to it. Seriously though, who doesn’t love the warm aroma of vanilla beans and the gorgeous little brown specs of beans really add a level of sophistication to a dish. After making the original recipe and these Vanilla Bean Salted Caramels, I must admit that I LOVE the vanilla version. Let’s get to the recipe, so you can decide for yourself….
Pumpkin & Pecan Crumble Tart
What’s a guy to do when he has a bunch of pumpkin pie filling and no desire to make dumplings anymore? No brainer. Go to the store, buy tart shells and start pouring in the rest of the filling! So that’s exactly what I did. Since I didn’t want to copy the last recipe exactly, I figured I’d spruce things up a bit with some pecans! (Which go very well with pumpkin I might add!)
Now this filling is a little bit different than your standard pumpkin pie, due to the fact that I started it out with cream cheese. What you end up with is a bit of a hybrid, pumpkin pie-cheescake thing going on which I enjoyed very much!

Pumpkin Pie Dumpling
While I was creating the Roasted Garlic, Spinach & Bacon Rangoon, I also wanted to do some form of dessert finger food. Seeing as I still had half a pack of wonton wrappers left, and several cans of pumpkin filling in my cupboard, this was a no brainer! It’s a fun take on your traditional pumpkin pie, wrapped in wontons, fried into a crispy dumpling, sprinkled with cinnamon sugar and dipped in some whipped cream! Probably don’t need to convince you to try these ones hey? Well if I do, just imagine a cross between pumpkin pie and a churro! YUM!

The Relative | Peanut Butter Baked Donut
Bob and I are quite excited that CTV Morning Live Saskatoon has invited us back to do another cooking segment. This time the challenge shifted to a holiday inspired dish, so with Bob’s rangoon and pumpkin pie dumpling, I knew I’d have to counteract the savoury with a sweeter dish. Now lots of people were asking for cupcakes, but I knew I had to branch out because I didn’t want to be known as the “cupcake girl”… so what’s the next dessert trend? Donuts! I opted for baked donuts for a few reasons: a tad bit healthier, no chances of oil fires and a bit easier too. I’ll be decorating just one donut on air, but I’ll chat about these three donut flavours: Santa’s Milk & Cookies, The Mistletoe and The Relative. But let’s get to the recipe.

Roasted Garlic, Spinach & Bacon Rangoon
With the holidays around the corner, appetizers are a much needed item at any get together, so why not spend a little extra time and make some delicious homemade ones? Better yet, get some friends together, make a large batch, have some drinks and have yourself an appie making party! Roasted Garlic
Consider this the prelude to my next recipe (Roasted Garlic, Spinach & Bacon Rangoon). This is actually the first time roasting garlic in the oven (typically I just saute a bit in a pan!), but it will definitely not be my last! It’s super easy, and not only does it give you some great tasting garlic, but you can also make garlic infused oil in the process!

Strawberry Balsamic Smash
Having received an excellent bottle of reduced balsamic vinegar, then coming across a drink with balsamic vinegar(!?) in Bon Appetit, my favourite foodie magazine, I felt the stars had aligned! Now I’m not much of a drinker, but I enjoy a casual beverage here and there, and this unique drink was right up my alley. The sweet and tart balsamic vinegar paired really well with the fresh fruit, cucumbers, and earthy flavour of the gin.
