Well it’s pretty clear that by the nature of this recipe that I: a) need to get a life b) need to find better things to fill my time with c) have gone crazy d) all of the above…..Whatever the proper answer is, I was on a roll with making dog treats (stay tuned for more recipes) for all the lovely canine buds in my life and thought “dog fortune cookies might be kinda funny and something unique.” So that’s where it started people. Let’s get to the recipe & the doggie fortunes….
Steak & Potato Barbecued Grilled Cheese
Let’s start off by saying WOOOOOOWWW. This latest grilled cheese creation is absolutely amazing and dare I say the best one yet?? First off, I grilled it on the barbecue, so that alone is a game changer, and second, it contains amazing ingredients from my previous grilled cheeses like potatoes, chives and caramelized onions, but adds juicy steak and provolone cheese into the mix! Seriously, this is like a steak sandwich on steroids! The idea came about while at work, as I was discussing my next grilled cheese prospect with my co-worker and friend of many years, Brett T. I had decided my next creation was going to be a barbecued grilled cheese, when Brett threw it out there…STEAK & POTATO GRILLED CHEESE.
The room was silent.
Not really…But I knew this was going down as soon as possible. The wheels started turning as I began envisioning how this behemoth of a grilled/BBQ’d cheese sandwich was going to come together, here is what I came up with.

Deconstructed Guacamole Sandwich
After picking up an avocado at the grocery store, in hopes that I would do something cool with it, I had planned on making a toasted tomato sandwich with avocado on it. While that would have been a simple and tasty dish, it wasn’t very creative. Fortunately, inspiration struck courtesy of the ingredients in my fridge (red onion mainly!) and the Deconstructed Guacamole Sandwich was created! These tasted great and were super easy to make, perfect for a quick snack or a twist on the traditional guacamole appetizer at at party!

I’ve been on a big pulse kick lately and trying to find unique and creative ways to add these super foods into my diet. Also, I feel very guilty for living in the Canadian province of Saskatchewan which produces 99% of Canada’s lentil and chickpea crops and 67% of Canada’s dry pea crop, yet I don’t really know how to re-hyrdrate them, cook or bake with them. So this is a continuation of my adventures! I made this grilled cheese a while ago and just haven’t gotten around to posting it, but since it’s NATIONAL GRILLED CHEESE DAY (Probably the best day ever?!?) I couldn’t not post a grilled cheese! Now this one is quite different from anything I have done in the past, with my super hearty and savoury grilled cheese such as the Baked Potato Grilled Cheese.
