Barbecue season is upon us, warm weather is here, and summer is on its way! Thanks to a very busy several months being stuck in my basement, editing a TV show, I am now experiencing uncontrollable cravings for warm weather and vitamin D! Ginger beer is something I’ve been wanting to try making for years, and even though I knew it was relatively simple, I just never got around to doing it! My day finally came two weeks ago when I had yet another Ethnic Potluck with the team from Ayden Kitchen & Bar (you may remember the last Ethnic Potluck via my Banh Mi). What needs to be said about this one? They have chili cheese fries, chili cheese dogs, chili cheese nachos, so the next logical step (at least for me) is a Chili Cheese Grilled Cheese! Plenty of hearty chili, loads of cheese, sandwiched between two buttery slices of bread.

Many of my grilled cheese creations stem from deconstructing a traditional dish, and turning it into a sandwich format (because sandwiches are simply the best!). For this one, I took my inspiration from the classic Chicken Cordon Bleu, a dish where chicken is stuffed with ham and swiss cheese, and often covered with a creamy sauce. Now you can enjoy this savoury meal between your fingertips instead of with fork and knife!

Well folks, my intentions were good, I really wanted to focus on posting more regularly, and then I failed!! I have been doing a fair amount of cooking and taking pictures for the blog, but I just haven’t taken the time to actually blog the recipes! This all changes right now, because it’s that time of the year again! NATIONAL GRILLED CHEESE MONTH! Well it’s sad to say, but Bob and I haven’t blogged in over a month (and largely Bob’s been steering the blog ship with more recent posts – thanks Bob). But we’ve both been busy just soaking up life, getting our hands dirty with our careers and our photography/videography businesses, but last weekend we did have a enough time to get in a sibling wild boar hunt. Yup, you heard correctly, a wild boar hunt. Bob was behind the camera recording an episode for Maximus Outdoor TV and I was behind my new archery bow. The hunt was successful with a large boar (click HERE if you want to see a photo) and when you put in work into providing your own meat, along with the guidance from our outfitter Wild Boar Adventures, you really want to make sure you follow up with a delicious tasting meal. I could say I feel bad about how many squash recipes I have posted over the last several months, but that would be a lie. I don’t feel bad. Squash is delicious! With that proclamation, I give you another recipe with squash in it. Once again, the February issue of Bon Appetit is pulling through big time, this is now the third delicious recipe I have made from it! Perhaps I should become a recipe tester for them?
Anyways, back to the recipe. After looking through the magazine, this one caught my eye, so I made a mental note to try it out. When I ended up with leftover butternut squash puree in my fridge a few days later, I knew this would be the perfect opportunity to use it!

Typically in winter I crave warm, hearty comfort foods like many others, but for whatever reason, this time I was really craving a salad. Given how cold and snowy it was outside, I figured, why not make this a comforting “winter” salad! With “wintery” ingredients already on hand, like kale and acorn squash, I knew I could whip something tasty up, so away I went.

To accompany the Winter Squash Salad I was conjuring up, I decided to whip up an Apple Cider Vinaigrette. I wanted a vinaigrette that had some pretty bright flavours, but still added to the “comfort” of the winter squash salad. The resulting vinaigrette was light, tart, with a touch of sweetness and hints of apple cider spice!
