Let me start off by saying THIS SANDWICH IS AMAZING!! Seriously. I didn’t know what I was in for when I made this creation, but i’m sooo glad I did! I have had this idea for quite some time and was originally going to make it when the Caramelized Onion & Mushroom Brie Grilled Cheese was birthed, as I had bought the ingredients, but couldn’t find Gruyere cheese at my grocery store. With my afternoon off and Gruyere in my fridge, I knew this was happening! Now I don’t expect everybody to make French Onion Soup every time they want this grilled cheese (which could be often!), so I whipped this up separately even though I made my French Onion Soup at the same time. Of course if you did make French Onion Soup, you could just take some onions from that and make this grilled cheese!
