Mancakes | Saskatoon C95 Bachelor Bacon Chocolate Cupcakes

So I guess the cat is out of the bag… I’ve been selected to participate on C95’s (a local radio station) version of The Bachelor as one of their lucky five bachelorettes. I was trying to think of something creative and delicious and yet a bit different to bring for my first in-station interview. So I decided what is a better way to a guy’s heart but food – specifically bacon and chocolate. Thus my invention of the Mancake. I figure the word ‘cupcake’ is a bit too girly and doesn’t perfectly describe a cupcake that combines chocolate and candied bacon – thus the word Mancake was born….

Shrimp Pho

While other people crave chocolate, fast food or other types of sinful dishes when they are sick or stressed out, mine is definitely Vietnamese food – specifically cold rolls and pho. I love the light and fresh flavours that leave you feeling full and happy. I usually order it from my favourite restaurant in town, the Asian Wok, but tonight I decided it was time to learn to make my own – especially with finances being strict with the new house and being sick and not wanting to be out in public…. Best Red Velvet Cake or Cupcakes Recipe

Red velvet is one of my favourite cakes. Everyone thinks it’s really fancy, but let’s get real here – it’s super easy. Just think of it as a mellowed chocolate cake with some kick (all thanks to our buddy vinegar). In the past, I religiously used the Magnolia Bakery Red Velvet cake from their great cookbook, but found it to be a tad dry and dense, so I decided to switch it this time to Chef Cake Man Raven‘s Red Velvet Cake recipe. WOW. I’m happy I switched! These cupcakes were perfectly moist, melt in your mouth delicious and nice and light….

Angel Food Cake with Lemon Whipped Cream Frosting and Citrus-Berry Compote

Well I must be honest… I tried to make an angel food cake from scratch last week and I failed… like not even failed a little bit… failed miserably. The whole thing didn’t even rise – but I blame the recipe since it said to combine the flour right to the eggs – and I shouldn’t have known better but hey…. learn from your mistakes right? So if you don’t find success, try, try, try again…and then made this beautiful recipe for angel food cake from the liner from the Wilton Angel Food Cake Pan.

Fried Pickles

I first saw fried pickles awhile back and thought, what a strange, but interesting combination that was. Since then and more recently my eyes have come across more fried pickles and figured what the heck, they would be easy to make and I have all the ingredients so let’s try ’em! After texting Carlene and telling her about the next blog recipe I was going to make, it became clear we share the same brainwaves. She responds “I just bought all the ingredients to make those!”, well sister, looks like I beat you to the punch! BUT maybe we will get lucky and she will do a bit of a twist and share her recipe too!

Anyways.

Broccoli & Cheddar Soup Grilled Cheese

I go through these phases in life where I can’t stop thinking about grilled sandwiches. My last serious episode was right around the same time BS’ In The Kitchen was born. There is just something extremely satisfying about a sandwich when you grill it. Take your bread and your ingredients and stack’em into a sandwich and you might have a tasty sandwich. But when you take all those things and fry it in a pan, or grill it in a panini press something magical happens! All those delicious ingredients just meld into this glorious irresistible super sandwich! Crispy bread, gooey cheese, all the toasty goodness that is inside…droool.

Lemon Dill Chicken Thighs

I’m working out of town this month and am fortunately not stuck in a dumpy motel, instead i’m in a townhouse at Waskesiu’s Elkridge Resort, so I have a full kitchen, pots, pans and all that good stuff! But being that i’m out of town and don’t have a fully stocked kitchen I am forced to keep my ingredients pretty simple (since the nearest grocery store is an hour away).
