Mushroom Parmesan Egg Sandwich

Lately I have been working 7 days a week, but now that it’s Christmas time I finally have some time off and the opportunity to be lazy until 3 o’clock.

It’s glorious.

Along with having time off, I am also able to cook during the day, meaning I don’t have to set up all my artificial light photo-taking junk and can actually enjoy the beautiful natural light! Makes taking pictures of my food MUCH easier.

At work we have an Iron Chef Challenge once a month where a group of people cook off and have their dishes judged by a panel of fellow employees. This month’s secret ingredient is…. PESTO! Right away I knew I didn’t want to do something traditional with pesto, so I ventured off to what I know best: Dessert. I made a Basil Chocolate Cake with a Parmesan Sour Cream Cheese Icing and topped it off with some pine nuts and grated parmesan cheese.
