Having buttermilk and chicken in my fridge, and after seeing an episode of Michael Smith’s Chef at Home where he marinates chicken in buttermilk, I quickly scanned my surroundings… Surely I wasn’t just watching the Food Network, but it was watching ME…

Well, turns out it wasn’t. But I took it as a sign, and did the next logical thing – marinated my chicken in buttermilk.

Of course, given that I had a few other ingredients I was looking to use up (namely dill), I perused the internets and found an appropriate recipe to guide me.

I know buttermilk is supposed to help make things tender and juicy, but given that I used drumsticks, which are already pretty tender and juicy, I can’t really say how much of a difference it made. But what I can say, is they were DILL-icious (I went there…), they were slightly tangy from the buttermilk and lemon, with a plenty of dill flavour, all complimented by the always wonderful garlic!

I have a “bad blogger” moment to admit to: Before Christmas time I made roughly 150+ perogies and ate them all… yes all of them… k well not all of them because I did share a few dozen with friends and family… but the large majority….. without taking a single picture of them or blogging them. Now full of blogger shame, this past weekend I decided to whip up another batch. However, I must be clinically insane because I’ve made over 300 perogies with this ginormous batch. So everyone can expect one thing: more perogy recipes will be appearing on the blog. Who knows – maybe I will be the Perogy Princess while Bob is the Grilled Cheese King. Last night I was pretty hungry and after avoiding groceries for the past three weeks, the only thing I really had in my fridge was celery… yup you heard me… boring ol’ celery. So I chopped a bunch up and just started creating and this is what I came up with. Being new to collard greens, I am quite the fan, the large, hearty leaves make a great vegetable side dish, or a great vehicle for other ingredients! Although I kind of failed at this being a healthy recipe (see: bacon & cheese), using a collard green as a wrap instead of your typical tortilla style wrap, is a great low carb alternative! Of course if you want deprive yourself, you can take out the bacon and cheese, making it uber healthy! I say spoil yourself though, put the good stuff in!

As with most people, what I eat is often dictated by what I have left in my fridge. In this case it was Greek yogurt and blood oranges. Peeling the orange, and tossing them into a bowl, I sweetened it with some honey and added a drizzle of chocolate balsamic vinegar for some pizzazz, and had myself a wonderful breakfast!

Blood oranges are in season!! Every year when the time comes, I make sure to pick up some of these amazing looking oranges. This year being no exception, I got myself a bag, unsure of what I might do with them, but knowing they needed to find their way on the blog somehow (they are too awesome looking not to be featured!). Given that I had a bunch of mint leftover from the Radish Raita I made, I thought this would be the perfect opportunity for mojitos! Once again Bon Appetit is appealing to my taste buds with this recipe. Pork chops are a regular staple in my diet, I love acorn squash, AND simple recipes! Although I’ve never been a huge fan of cilantro, it was perfect in this recipe, really complimenting the flavour of the squash seeds, I actually found myself eating the extra seeds mixed with fresh chopped cilantro! As always, I made a few modifications to the recipe, cutting it down to a single serving, and using the acorn squash seeds instead of pumpkin seeds. It also said to shell the seeds, which I definitely was not going to take the time to do! Instead I left them whole and roughly chopped them as stated in the recipe, and it tasted great!

Every time I cook a recipe from Bon Appetit, I am consistently impressed with how good it is, and this one is no exception! What a great trio of flavours this dish had. At it’s base there was rich, flaky salmon with a beautiful pan-seared crust, on a bed of hearty collard greens, finished off with a side of cool, refreshing Radish Raita. Having never actually eaten collard greens, and having seen them recently at the local Sobey’s, my interest was peaked when I came across this recipe in Bon Appetit’s March issue.

Nothing says Valentines Day like coffee cake right? Well for me, it’s a simple equation, COFFEE = LOVE, so when my girlfriend Megan (The Microwave Master) had to figure out what to get me for Valentines Day, she settled on baking me a coffee cake! Given that she has only baked for me once during our nearly three year relationship, it was sure to be an undertaking! Initially she was going to make it as a surprise, but since I was in charge of supper, and already at her house, we made it together, which was 100% better, because i’m always bugging her to cook with me! It was a wonderful gift, and while I didn’t have my camera on me at the time, I made sure to get some photos the next day so I could document this beautiful cake, and create Megan’s FIRST BLOG POST! YAAAA! Maybe she will become a food blogger too! (Pig’s can fly right?).

Anyways, here is the recipe, slightly modified from The Tasty Bite’s Buttermilk Coffee Cake.
