Given the popularity of this wrap Carlene made a while back, I knew I had to do a grilled cheese version of it! Well folks, it’s popular for a reason! This was so delicious! Meaty portobello mushroom, sweet roasted red pepper, fresh basil, and all that creamy goat cheese! I can still taste it! This one takes a little more prep work since you have to roast the red pepper, and portobello mushroom, but that just means tossing them in the oven for 30 minutes while you do other things!

Hooooly maaaan. I’m not sure how much gluttonous punishment my body can take at this point. All I’ve gotta say is thank God for 25 year old male metabolism! As a Canadian, I feel, as a commitment to my country, a poutine grilled cheese had to join the ranks of National Grilled Cheese Month. Grilled bread, gravy, cheese curds, fries… I sent farewells and love to my family as I embarked upon this grilled cheese, unsure if I would make it through, certain an untimely demise was imminent. But alas, I am here, writing about it, with a renewed lust for life! This was one mean grilled cheese! Crunchy bread, with layers of rich gravy, salty, suuuper stringy melted cheese curds, surrounding crispy french fries! I suppose I can find solace in the fact that I used “healthier” fries, making this Baked French Fries to use in the grilled cheese!

Well folks, we have a top contender for grilled cheese of the month…. But really is it fair for this three cheese, meat tomato, etc, etc, combo to be going up against featherweights like “The Slim”?? Maybe not, but WHO CARES!! This was one MEGA DELICIOUS grilled cheese! It’s like having lasagna, without actually having to do all that boiling, frying, stacking and baking (not to mention waiting!). In pursuit of all things cheesy, Spanakopita was one of the many things that came to mind. Not only does it contain one of my favourite ingredient pairings (spinach, garlic, and onions), it contains not one, but TWO types of cheese, feta and ricotta! It’s hard to beat all these things combined into beautifully flaky phyllo dough. BUT in the name of gourmet grilled cheese, I scrapped that flaky phyllo for buttery, crunchy, toasted bread, and created the Spanakopita Grilled Cheese! A creamy, garlicy, spinachy, salty, crunchy piece of heaven worthy of the pallette of Poseidon (why is there no Greek God of Spanakopita?!?)!

 Sometimes i’m just not in the mood for an epic grilled cheese masterpiece, sometimes I need subtlety, sometimes I need simple, sometimes I need “The Slim”. A tiny, crunchy, cheesy, delicious treat that’s not going to reduce my lifespan.

The goal of this sandwich is not to be slim as in healthy, it’s more about the slimness of the bread. When sliced this way and buttered up, you get this amazing super crunchy exterior, surrounding the melted cheese. Imagine eating a potato chip stuffed with melted cheese (wow that would be awesome), this is my ode to that vision.

Whenever “ooey gooey, runny egg yolk” is involved in a recipe, say no more! I WANT IT! Not to mention, bacon AND cheese! Like seriously, what am I doing to myself?! Now I was having a bit of an internal struggle with this grilled cheese, deciding, hmmm should I put a hashbrown in it, or would that be too much? After all these epic grilled cheeses, I was leaning towards excluding it, I mean how much can my body take!?! Makes sense right? Everybody knows it, so WHY has nobody made a Wine & Cheese Grilled Cheese before?!?!? As I’m writing this, I decided to give it a Google, and found nothing! I like to think of myself as a bit of a grilled cheese trendsetter, so this pleases me greatly! Now that I’ve let the cat out of the bag, start making these!! Seriously, the options are endless. Take your favourite wine and cheese pairing, give the wine a quick reduction, spread it, stack that cheese, grill it and DEVOUR IT! But please be refined in your devouring, this is wine and cheese remember.
