Technically a mozzarella stick is already grilled cheese…The bread just dried up, fell apart and reunited in the form of crumbs surrounding that delicious stick of mozzarella! Of course, I wasn’t about to make a mozzarella stick and call it a grilled cheese, so I went about breading this delicious sandwich with panko crumbs to create the Mozzarella Stick Grilled Cheese!

Reminiscing on blog posts of the past, I recalled the Prosciutto & Smoked Gouda Egg Sandwich I posted a couple years ago (WOW it’s really been THAT long?), and knew I had to fit those flavours into our 30 days of grilled cheese! Given that this sandwich was just going to consist of Gouda and prosciutto (no egg this time), I decided against using smoked Gouda, because as delicious as smoked Gouda is, my stomach cringed at eating 1/2 a cup of it along with the already smokey/salty prosciutto.

Mmmm mmmm mmM! What a grilled cheese! Gooey cheese, crunchy potatoes, all my favourite parts of scalloped potatoes, in my favourite kind of sandwich! I gotta say potatoes certainly do go well in grilled cheese sandwiches (see Baked Potato Grilled Cheese). Now for me, the best part of scalloped potatoes is the crunchy potatoes you get on the side and the top, so that’s what I was looking to emphasize (and boy did I ever!). If you love the creaminess of scalloped potatoes, all you have to do is either, cook the potatoes less, so they’re not as crunchy, or boil down a quick creamy sauce with milk, butter, and flour to go in the grilled cheese. I almost want to make another right now just to try a saucier version!

Ripe juicy plum, touches of sweet honey, the always satisfying salty/smokey/meaty bacon, brie melting all over it, and a touch of pungent blue cheese to pull it all together! This was probably one of the most interesting flavour profiles out of all the grilled cheeses I have done, and I loved it!

I’m stepping out of my usual ooey gooey, melty grilled cheese territory with this one! It’s a veggie packed, crunchy, creamy grilled cheese, and it’s delicious! A traditional greek salad, in sandwich form! Since feta is a more solid cheese, you don’t get that stringy meltyness from it when it heats up, instead it retains it’s shape for the most part, but gets extra creamy, which is equally delicious and a nice change! I was slightly concerned about how well the cucumbers would hold up under the heat (soggy cucumbers are gross!), but they remained crunchy, taking on a more pickle like crunch, rather than the cucumbers usual fresh crunch.

I believe this sandwich could be a turning point in my life, marking the start of an exciting new relationship with mustard and pickles. I have never been a huge fan of mustard, and hesitated to put a bunch on this sandwich, but I did it anyways, and am sure glad I did! The mix of mustard and pickle, with the Swiss cheese, and all the hearty meat was so great!

I know this recipe isn’t much different than an actual Cuban sandwich, so to rocket it into grilled cheese territory I loaded it up with Swiss cheese! Cheese on the bottom, cheese in the middle and cheese on top! Gluing all those wonderful ingredients together into a beautiful, beeautiful sandwich! Praise Cuba!!
