Summer Puerco-Corn Soup

August 17, 2010 by bsinthekitchen

Summer Puerco Corn Soup | bsinthekitchen.com
This post is a continuation from our Caribbean Mango-Apple Pork Roast. We used the leftover pork to make this flavorful, fresh summer soup. Now let me quickly explain something, I hated the name Summer Pork-Corn Soup – it just doesn’t have that nice culinary ring to it. So I did a quick name/language change and called this soup Summer Puerco-Corn Soup, which Puerco meaning pork in Spanish. So much better sounding right BS’ers?!

Okay, let’s cut the Chatty Cathy mode here and get straight to the recipe:

Bob & I were recently selected as Western Canada’s Top 20 food bloggers (as selected by Maple Leaf Foods) – SUPER exciting right?! Anyways, Bob and I nearly jumped out of our pants when we found out we had been selected. Now, you may be asking: Okay, cool that you guys got picked, but why/now what?

Well we were sent a lovely little package via courier and inside was an awesome meat thermometer, a Maple Leaf Red Apron (I strong armed Bob to keep it) and some coupons for Maple Leaf Prime Pork. The Challenge: Create a Dynamic Pork Recipe & Win (via votes – this is where you come in BS’ers) the Maple Leaf Prime Pork Recipe Challenge.

So let’s get right into this and start off with our recipe. Okay, I lied, I’m first going to give you  background to why we selected this recipe. Homemade Butter (Infused with Saskatoon Berries)

August 5, 2010 by bsinthekitchen

Saskatoon Berry Butter | bsinthekitchen.com

After a recent challenge from the honorary eater of the Boy Bait Cookies to re-create Culina’s famous blueberry butter, I ventured into the kitchen to see if I could even come close to matching it. Well, I think I may have done it!! *Secretly gave myself a quick fist pound in the kitchen for accomplishing this – shhh don’t tell anyone…* And to my surprise, making homemade butter was even easier than I thought, so now I challenge you to make some of your own homemade butter:

Barbecued Elk Roast

August 2, 2010 by bsinthekitchen

Barbecued Elk Roast | bsinthekitchen.com

It’s about time for some DS In The kitchen, that’s right, Dad and Son! Oh what a combo we make!

We had Dave on the Elk Roast and myself adding some input on the seasoning and taking care of the potatoes. First off we seasoned the elk roast with some Cavendar’s Greek Spice and browned the outside in a pan with some olive oil. Once this was done we poked a hole in the middle of the elk roast so we could secure it on the meat holder (whatever it’s called??). Since we had to put a hole in the center of the roast, I figured we might as well stuff it with some flavouring right? So, on we went putting lots of garlic cloves and greek spice into the center of the roast.

Yum.

Kale Chips: The Perfect Excuse to Eat Chips

July 28, 2010 by bsinthekitchen

Kale Chips | bsinthekitchen.com

Our Walmart here is Saskatoon recently got converted into a Super-Walmart and long behold they had kale! Before making these chips, I never tried Kale, but I can let you know that I will be buying it again soon. These kale chips are a great way to pack in some crunch of potato chips, but load up on some great vitamins that the kale has like beta carotene, vitamin K, vitamin C, lutein, zeaxanthin, and reasonably rich in calcium and even has anti-cancer agents. I know, you’re sold on the recipes already! So let’s get to it (in steps this time):

Chocolate Raspberry Pavlova

July 25, 2010 by bsinthekitchen

Chocolate Raspberry Pavlova | bsinthekitchen.com

Recently I was told I had to bring an appy to a dinner party that was in three hours – I quite easily could have been told prior to, but it completely slipped my mind. Anyways, I couldn’t leave home to go and grab groceries and was stuck to a limited fridge and pantry of food and thought “Oh F, what in the world am I going to make that people will like?”…. so I thought “ah, rhubarb crisp with frozen yogurt – the perfect summer staple”, so off to Taste Spotting I ran to search for a funky recipe (I didn’t feel like using my staple recipe), but instead came across another delicious delight: Pavlova.  I’ve never made it before, and its contains my largest baking fear: egg whites. But I thought, “Ah what the hell… Let’s just give it a try!”

July 23, 2010 by bsinthekitchen

BBQ Pulled Chicken | bsinthekitchen.comA few weeks ago, I had to the chance to experience my first Calgary Stampede! It was an awesome time, filled with great people, drinks and cowboys. It’s a definite “let’s do that again” event.

Having to travel from the City of Bridges to Cow Town for the big event, I was lucky enough to have a great place to stay – thanks again Ball Family!! 🙂 One of the evenings, Momma Ball was a great host and made our whole crew some pre-drinking food: Zesty Slow Cooker BBQ Pulled Chicken – from here on re-named to:

“Momma Ball’s Famous Stampede BBQ Pulled Chicken”.
